Vegetarian Kidney Salad for Loners

All of my little green friends have deserted me today, so here's one for loners and weakish wingy indecisive types with cold feet, salt lovers with achy lower backs and all that. Kidney people, you know who you are.

In fact, you shouldn't really be eating salads at all in your condition, have something warm instead. But since nobody cares, and while we are on our own, why not feel a little sorry for ourselves and do it anyway, just for the sake of feeling a little worse and blaming other people for it? Sounds like a soothing plan to me.

Parsley. You want lots of that, it's good for your kidneys.
some fresh oregano
some spring onion
carrot, capsicum (not too cold)
beans! I was sure we had a can of kidney beans when starting this, but someone must have stolen it. I feel too weak to photoshop these white ones, so please have your imagination work on the picture. And apparently kidneys are easily fooled by anthing roughly their shape. They like beans, so lets take advantage of the fact that Mr I-Hate-Beans-and-do-not-get-tired-of-mentioning-it is out wandering.
Some sundried tomatoes.
Lemon juice, salt, and a good olive oil.

Do not make too much if you don't have any friends who will eat it with you.

When I am done with this I will eat all these overexposed muffins and have a good cry.

Ah, and look how empty the bowl looks!

Let me add that tristesse can be further enhanced by someone giving a depressing lecture on the  dull landscape of East Frisia while eating this salad.

Cheddar Celeriac Walnut Salad "Kleiner Frosch"

1 glass of grated celeriac - is that available anywhere? I washed it a little, because they conserve it in something sour
a small apple
2 grated carrots
walnuts, chopped
vintage cheddar, crumbs or something like that
spring onions
a little sugar
salt
lemon juice
olive oil (generous and a nice one)

I was going to put a little cabbage but didn't
Add some raisins, and it will be like a salad version of Müsli.

We have not yet solved the kleinerfrosch mystery, have we?

Gueststarring: Ausländerin

Loosely crafted after Mark Bittman's NY Times recipe, our tastebuds were hit by a wild surprise creation of unforgettable Ausländerin today, one of Wundersalat's earliest followers and most observant fans. The attack was launched so sneakily clever, that even some super sceptic salad beginners ("This is not even green") accidentally fell for it.

Here we go:

a good water melon, if you don't get a decent one, forget all about this endeavour in the first place. Cut into cubes
feta cheese, crumbs or cubes
spring onion
cherry tomatoes
olive oil
some water melon juice caught when chopping
white wine vinegar
salt, pepper

some black olives would also be nice, we were thinking ... and the original also has parsley and a pinch of cayenne.

Hugest salad turn around ever at frogster office. Bang.

Fresh Greens with Tsatsiki

Another Monday creation ...

We had some

green lettuce (roma)
and a cucumber sitting in the fridge
plus some pickled gurken (cornichons)
and dill

dumped a yoghurty tsatsiki like dressing on it:
onion (rings)
olive oil
lemon juice
yoghurt
cucumber (a little, grated, not too much water)
salt
you may want to add some quark if you are familiar with the concept of quark/topfen

and garnished with some
garlic croutons
sunflower seeds
and walnuts

Corn Lettuce, Croutons and Guacamole

2 mashed soft avocados (don't waste the fun job of mashing them on someone who does not appreciate it :)
1 tomato, cut in small pieces
2 red chilis, pacified for the softies
lemon juice, lots
spring onion
salt pepper

corn lettuce can be sprinkled with lemon juice, olive oil
and some cheesy croutons (really, our readymade ones weren't too exciting)

nice, nice.

Who's Afraid of Sprouts?

We decided we were not, not anymore - Although that Ehec summer of 2010 has left a traumatic shadow on my once favourite vegetable ... And I recall the signs saying "Gurke unschuldig" once the real culprit had been identified. So today's salad is a lesson in forgiving.

Anyhow:

sprouts. Bean sprouts seem to be the only ones that seem to have survived the crisis.
carrot curls (use a vegetable peeler and a patient intern)
fresh coriander leaves
some spring onion
some baby corn cobs

dressing:
a tiny bit of garlic
sambal oelek
coconut milk
crunchy peanut butter
some hot water
soy sauce

some peanuts for topping for the style-oh photograph

Everything (i. e., not much)

Turns out that kohlrabi in the fridge was ours all along.

kohlrabi
carrots

that's all there is.
That and some rubble floating around in the kitchen - fertile ground for some high level creativity:

a shallot, chopped
some mango juice
olive oil
whole grain dijon mustard
salt pepper
wasabi, a little
soy sauce (did I)
a bit of a apple
some backerbsen
some almonds
some baby corn cobs

Well? Cleared some storage space for inspirational shopping I'd say.

29th Hamburg International Short Film Salad

It's that time of the year, Hamburgers ... Don't waste your time cooking hot food this week: Now that the sun's out, we'll go hide in theatres ...

Now, back to salad business: I know you missed your beetroot. We did too. So here you go:

sweet corn
beetroot
some herbs saved from yesterday, parsley and rocket
black olives
(sugarless) coconut flakes

dressing is
half orange, half lime juice
salt pepper
olive oil
onion, finely chopped
sweet mustard
some bitter jam

(a bet you can match a short to all of these ingredients, but I'll leave that to you)

Wunder is in an extra generous giving mood this week, letting yet another Kamerakind have a go at visuals ...
