Couscous Salad (shocking the salad world with a plain title today)

Couscous - Prepare with veggie broth, don't use too much water for it, consider dressing will also add liquid and we don't want it to go all soggy.

Feta, crumbed
Some pine nuts, preferably toasted.
Cucumber, some cubes
Tomato, likewise
Parsley, chop.
Radishes, slice.
Peppers - some pieces. These were pickled and from a jar.

Dressing:
A shallot
Some mint leaves, chopped
Salt, pepper
Lemon juice
Orange marmalade
And I am still getting rid of the barbecue sauce, but some tomato sauce or puree will also do.
Some soy, some sesame oil. Not necessary.
Olive oil.

Stamp dressing ingredients a little in a mortar to bring out mint flavour. Minty is nice.

Irish Moon Landing

The moon is made out of cheese, we all know that. What is not so widely known is that it is in fact made out Irish Cheddar, and that the Irish were first in conquering it (thus the green flag).

So: Someone will have to grate the celeriac. And the carrots, unless you want to use jarred.
Smoked tofu, here we go again. Chop finely.
Radish, some, slice.
Cheddar, chop
Shallot
Some parsley
Pumpkin seeds

Dressing
Barbecue sauce
Olive oil
A little twist of lemon juice
Orange marmalade
Salt, pepper.

Crunchy Cassis Feast

Beetroot, cooked, sliced
cover with dressing of
olive oil, ginger marmalade, salt, pepper, some beetroot juice and super fancy cassis vinegar that really is worth an investment.

Walnuts, chopped
sunflower seeds
finely chopped celeriac, some
finely chopped smoked tofu, some
fresh parsley
cooked corn, cut fresh from the cob

Yoghurt Soupy Lentil Beets

1 can of brown lentil
cooked beetroot
parsley

plain yogurt
a little honey dissolve in water
salt pepper
olive oil
lemon juice
onion

Asparagus Avocado Salad with Creamy Mustard Dressing

1 glass of white asparagus
2 avocados
some rocket

Nicely arrange avocado and asparagus on a bed of rocket.

dressing:
a shallot, very shined chopped
creamy dijonnaise mustard, if available
mayonnaise
white balsamico
honey, dissolved in a little water
salt, coarse black pepper

Beans and Walnuts

Hello 2013 walnuts. 

A super simple bean salad:

Canned green beans
fresh parsley, lots
sundried tomatoes
walnuts

dressing:
Shallot or onion
walnut oil
black pepper
dark balsamico, lemon juice
salt, a little soy
ginger marmalade, in this case, but some honey will also do
tabasco
some crunchy hot dog onions if you like

Mock Frog

Next we have number 4, Crunchy Frog: This is another one of those clear-out the fridge salads. With love from the Hygiene Squad.
 
Cucumber, sliced
carrot
canned sweetcorn
shallot

some fresh coriander
backerbsen - fried batter balls, like Indian boondi
peanuts

For the dressing, dissolve some peanut butter in a little hot water until you have a liquidy, creamy consistency. Add sambal oelek, some soy sauce and only a little lemon juice.

Add dressing just before serving to avoid the batter balls going all soggy. If we took the bones out, it wouldn't be crunchy, would it?

Frau Rotkohl

Winter has officially arrived on the weather charts, we are counteracting with some colour.

HAPPY DIWALI!

You will need a glass of cooked red cabbage for this, and I am not sure if this is available anywhere outside of Germany?
1-2 sour apples, sliced
1-2 red onions, chopped
some orange peel and filets
some almonds

For the dressing:
white balsamico. If the rotkohl is sour, maybe even replace with orange or apple juice.
salt, pepper
oil (olive will)
some orange peel and orange marmalade
and, depending on how sour the cabbage is, a little bit of apple juice.
