Cross over avocado salad

Not sure where or what we are crossing over here, but I didn't verify there would be pistachios in Columbia, thus hesitant to follow a suggestion to name this South American avocado salad. It's probably as "South American" as the take away on the corner is "Asian".

2 avocados
a can of green beans
fresh coriander leaves
sundried tomatoes

dressing made out of
shallot
mustard
orange marmalade
brown sugar
lemon juice
salt
olive oil

cucumber

with a christmessy dressing made from ginger jam, sesame oil, peanut oil, a little broth and soy sauce, pepper, some chilies
fresh coriander
sesame seeds

Add a few lentils for winter substance.
You could even fry some Urad daal for extra crunch.

Couscous Salad with Beetroot and Pistachios

Boil the

couscous

in some veggie broth. Don't overboil it, actually just cover it with water and let it sit with a lid to absorb the liquid. We want it nice and fluffy. When done, add some spices

a little fresh ginger, grated
paprika
pepper
garlic to taste

Grate a

(raw) beetroot
some zucchini

and mix with the dressing:

1 small shallot
lemon juice
a tiny bit of soy sauce and/or smoked salt
olive oil

Combine couscous and veggies.

Last, garnish with some

feta crumbs (these can easily be left out if you want it vegan) and pistachios.

Jammed cucumber, tomatoes, sprouts & chicory

Another one of those Mondays that looked a little low on supplies at first sight.

Chop up a cucumber
a few tomatoes
one chicory
add sprouts (these even came from a jar and were slightly pickled)

For the dressing
juice of 1/2 lemon
some peanut oil
some sesame oil
a few chilies
soy sauce
some coriander
big spoon bitter orange marmalade
ginger marmalade or fresh ginger, grated
a shallot or small onion (thin rings)

some cashews to top

Cucumber Salad with Dill and Crème Fraiche

Cucumber, peeled and sliced

Dressing
a finely chopped shallot
some lemon juice
crème fraiche
something sugary, like orange marmalade or honey
mustard
salt
fresh dill

Let the dressing sit for a little while if you can.

Some cashew for topping.

Smokey Lentil Salad

We had a huge can of pre-cooked lentils sitting on the shelf that came in handy today. Get rid of juice, then add
a carrot
and pepper, both chopped into cubes

some smoked tofu
lots of parsley
some chilies
black olives

dressing was made from
olive oil
lemon juice
a chopped shallot
smoked salt
some mustard
and something else I can't remember

On Fridays, it turns out, the fridge is close to empty. I never usually do Fridays, I only do the days of plenty.

But here we go, nothing is still good for something:
green beans. 2 cans
pepper
some feta and black olives

a nicely, patiently chopped shallot

paprika powder

Colourful Autumn Salad

A lovely green bean salad, not unlike the one we made ages ago

2 cans of green beans

And the real magic is in the jar again:

Put some pickled onions and some of their marinade
some soy
some lemon juice
olive oil
a little sesame oil
some smoked salt
sundried tomatoes
pears
parsley
and smoked tofu

in a jar and allow to sit for a bit if you can. Then just add to to the beans. This is good!

Pickled Pear Winter Salad

We had some pearl like balsamico onions, and I dumped them in a larger jar with slices of pear and smoked tofu, some chilies, a bit of soy and some spices to marinate overnight. Looking good in the morning.

Take that! and
some nice oils
sugar
parsley
as a dressing

and mix with

some lettuce
carrots
some celeriac

throw in a few walnuts and raisins and you are done.

Nice, healthy wintery composition.

Seemingly random salad - a not-so-light avocado, nuts & sprouts salad

a tiny bit of pickled celeriac, if you so wish, but it is really totally unnecessary. Call it the random ingredient.

Mixed seeds and pistachios for topping

The Tree and the Rocket - a light basil-orange-rocket salad

"Oh, we have a salad tree!"

Yes, we have the salad tree, and we plug a fresh new salad from it every day. If you are lucky, you can even have a just-ripe one falling into your lap. Only thing is there is not a lot of salad trees around, and thus many people have to make them from scratch, we hear.

So here is the fruit of the day:

rocket
basil (lots)
orange fillets

a finely chopped small shallot
some juice from the oranges
orange marmalade
olive oil
soy sauce

Mango & Chick Pea Salad

chick peas
mango

coriander (lots)
a shallot
cream or coconut cream
some tomatoes, mashed
mango (or some other) chutney
some vinegar
turmeric
some ginger
some garlic to taste


Swabian Shopska Salad: Wundersalat Off Track and Slightly out of Focus in Tübingen


Shopska at last! Visiting the Umbrian & Provencal Market and the cosmo relatives in Tübingen led to this appealing creation that may be Bulgarian by origin.

All of these were treasures grown in fresh air by happy people, and incredibly tasty:
tomatoes
cucumber
zucchini

 olives (these were lemon filled, delicious)

onion (rings)
lovage
basil
chives
or whatever fresh herbs you have available

lemon juice/vinegar
olive oil (use the feta marinade if you have extra)

Last not least:
marinated sheep's milk feta crumbs as topping

Seasoning came from a jar that was suspiciously labelled "Bulgarian mixed spices" - sorry. No idea what was in it, I would assume some paprika, garlic, salt, pepper and chili (and something secret), and I guess you could not go too wrong with good old Brathähnchenwürzsalz, either. Just take any seasoning mix that you have sitting on the shelf and that you were never quite sure about what it was meant for. Every now and then, one has to be brave and adventurous.

Peas and raddicchio

Now this was a true leftover creation, but it turned out so nice that it did gain entitlement to appear here.

radicchio

and some cucumber

some vegetable broth
some olive oil
some vinegar

capers and a little coriander
mix all these for topping

Bitter salads with sweet orange cream

some radiccio
lollo biondo or frisée, endive salad or something like that

And to balance the bitterness, we'll have a sweet, soft dressing made from:
orange juice, with a little lemon added if not sour enough
orange marmalade, quite a bit

a finely chopped shallot to taste

sesame oil (little)
and I happened to actually have some plum juice in the fridge, but you could cheat with something less fancy, like, eg. some apple juice

Have the prunes marinate in the dressing for a bit.

chickpeas
fresh figs, cut into slices
1 spring onion
fresh parsley
pistachios

and a dressing made from
lemon juice
olive oil
a very finely chopped shallot
honey
salt to taste and black pepper

garnish with some crispy danish onion and crumbed feta

Ausländerin's Pre-Naturalization German Cucumber Salad

Based on Tim Mälzers recipe:

2 Cucumbers
1 Shallot
A bunch of dill
200 ml cream
2 TbSp White Balsamic Vinegar
A peppermill
Salt to taste

Peel and finely slice the cucumbers.
Put  salt, some rounds of black pepper from the mill, and some sugar on the cucumbers and gently mix with hand.
Let the cucumbers sit for 5 mins.
Meanwhile finely chop a shallot and finely chop a bunch of dill.
After 5 mins drain all the water from the cucumbers by slightly squeezing them.
Mix in the chopped shallot, the dill and the vinegar.
Add the cream and adjust the salt.

Gravel Salad

Preferably prepared without the gravel if you ask me. There were several stones in the Edeka-Raisins, a bit of a scandal really.

Chickpeas
Cooked beetroots
Raisins
Pine nuts
Pepper, salt
Lemon juice - or orange juice
Olive oil
Some Arabian spices to taste
Parsley

Top with tahini sauce (don't mix through with salad, just have blob of this sitting on top)
Tahini, some hot water
Lemon juice
Salt

Replacement Friseé (not Friseé Replacement)

Here we are, stranded with some very average friseé. Whenever the delivery people don't have what we want, they bring us "replacements", and those can be tricky.

So, friseé.

And a dressing.
Coconut milk
Orange juice and a squeeze of lemon. The lemon is optional and largely dependent on orange quality. Here we need it to remind the orange that it is actually a citric fruit.
Sambal oelek
Some grated fresh ginger
Ginger marmalade
salt (I put some smoked salt again, and a splash of soy)

Smokey Lentil Salad

After close to 250 salad recipes, one would think it should get hard to get excited about anything.
But I have a new favourite ingredient and you can expect extensive playing around with it in the coming decades.

I can see it becoming a basic, and no sane salad soul should go without it:

smoked salt.

Just drape some random ingredients around it and you will be fine.

We had our debut with
brown lentils
sweetcorn
carrot
a shallot

dressing made from
parts olive, parts sesame oil
orange juice with a twist of lemon
mango chutney/orange marmalade
some tabasco to taste

The Salad that Scared 3 Grown Developers to Death

They scream! They jump backwards! They make faces!
Only because of this: the fake vegan Leberkäse. Meat eaters are a delicate species, so soft and easily freaked out.
Let me know when you grow tired of my fascination for vegetarianizing South German wurstsalats.

For this one you also (apart from the Leberkäse) need:
Radish (Bavarian Radi). Cut into very thin slices and allow to water with salt.
seedless grapes
some pickled gurken

Top with
Pretzels
Alfalfa Sprouts

Dress with
some gurkenwater
mustard
oil
mayonnaise
sugar
pepper

Now I can also admit I put some of the horrible beer jelly, but it did not even taste too bad.

So let's try to be precise for once:

1 can o' green beans
4 spring onions, chopped
2 peeled oranges
1 red pepper
some 50 g walnuts
salt to taste (precision out the window)
3 table spoons olive oil
2 table spoons while balsamic vinegar
1 teaspoon orange marmalade
juice from the orange

Fitness Salad

That is one we have avoided so far, but the term "Fitness Salad" is bound to appear in every second women's magazine.

A strange term, if you think about it. Just thinking about the word that popped to my head this morning, I think this is what a "Leckerer Fitnesssalat" should look like. If this does not get you into shape then what.

Oh, ingredients.

any sprout mix. I wanted alfalfa, they seem to be out of fashion.
sundried tomatoes (and here the magazine would read: soaked in water, not oil)
sunflower seeds
i added some pumpkin seeds
cucumber

1 chopped shallot
let sit in lemon juice and salt and pepper and a pinch of brown sugar and some mustard
before adding the yoghurt

And remember to go for a run afterwards.

Post-apocalyptic salad #1

Research shows that if the world were to end today, foods on stock at the average supermarket could feed you for approximately 55 years. 62 if you are also ready to eat the canned dog and cat food.

That is some fantastic news.

55 years of lovely canned salads starting today with:

a can of green beans
pickled cooked beetroot
Tahini
lemon juice concentrate
orange marmalade
some hot water
a little sesame oil and seeds

an onion (if you can did one out in your back yard)
plus the memory of fresh coriander leaves. Just imagine they were there.

Carte Blanche Salad

Today I got carte blanche from Tante Kerni to put anything I want in the salad and then she will make a nice dressing to fix things up. :)

So I challenged with:
- baby spinach
- thinly sliced red radishes
- striped smoked tofu
- soft goat cheese
- black olives


and got response:
- rouille
- mustard
- olive oil
- raw sea salt
- white balsamico
- honey
- orange marmalade
- a little mayonnaise or yogurt

Pretzel Salad

Somewhat expanding on yesterday's octoberfestish approach of rural South Germany.

For all of those likers of wurst salad out there. And those afraid of even the thought of it.

This one is with
Bergkäse/Suisse cheese cut in stripes
some stripes of smoked tofu
onion rings
red radishes
pickled gurken
black olives
some pickled red peppers though those are not essential.

Dress with vinegar, oil, sugar, salt, pepper, mustard, some soy and gurkenwater.

And, of course, crumbled pretzels as a topping!

Yet another Vegetarian Wurstsalat

I was so stunned by the couple eating Wurstsalat at our table at a café in Constance, returning all the green decoration that came with it, just eating the meat and onion, that I just had to re-try this.

1 vegan leberkäse - if you cannot get that, replace with smoked tofu
You can also add some cheese to make this a Suisse vegetarian wurstsalat :)

some pickled red pepper and pickled gurken
red onion, rings
parsley
some tomatoes

mustard, oil, sugar, salt, pepper, vinegar, mayonnaise to taste

Smokey Paprika Salad

Pointed peppers :) - in rings.
Tomatoes.

Dressing from lemon juice, a little mayonnaise, a little gurkenwater, oil, something sweet, salt, pepper. We put some fresh thyme.

Cubed scamorza, pickled gurken, and a few green olives as topping. Some paprika.

Scamorza D-Light

Try to get hold of some lovely smoked Mozarella cheese - Scamorza. Comes in a funny shape.

This is a smoky Cesar variation.

Some green lettuce will do, wash and dry.

A shallot, very finely chopped sits in some lemon juice, salt and olive oil with orange marmalade. Add mayonnaise to make it creamy.

Add croutons to taste.

Carrots and Snow Peas in Yoghurt

Easy easy lazy - and refreshingly crunchy on a summer day.

Grated carrots
Snow peas - wash, cover with boiling water, shock-cool with iced water and cut into stripes
A shallot to taste

Lemon juice
Yoghurt
Sugar
Salt
and a little nutmeg.

Anitpasti Salad

Marinade some sundried tomatoes and grilled red peppers in balsamico, olive oil, salt, pepper, a little soy sauce, a little hot water, thyme and fresh parsley overnight.


Add some rocket, sprinkle with lemon juice and olive oil and some of the marinade, top with antipasti.


Have with or without some mozarella. I will have to check the story with the baby calves before I will put it in a recipe again, as I would like to be able to state "no baby calves were harmed in the making of this salad". Who wouldn't.

Orange and Beetroot Entree Salad with Tahini Yoghurt

Orange, peeled and cut into slices
Cooked beetroot, cut into slices
Arrange in a curl, slice by slice, as you would an insalata caprese

Dressing:
Lemon juice, tahini dissolved in a little warm water, yoghurt, salt

Top with coriander and some sesame seeds.

Romaine Lettuce with Orange-Basillaise

This one's a quicky:

Chop up some lettuce, like roma.

Dressing is mayonnaise, chopped fresh basil (let sit a bit), lots of orange marmalade, lemon juice, salt, a bit of oil to taste.

We added some onion rings, little tofu cubes and pickled pearl onion.

orange marmalade
some sesame, some olive oil
salt, soy
some lemon juice, some dark balsamico

Mix the dressing ingredients with the canned brown lentils, pour over rest, top with the basil.
