Hot Sweet corn and Avocado Salad with Herbs

  • 1 red pepper
  • 1 can of sweet corn
  • 2 avocados
  • some spring onion
  • coriander
  • cress
  • chili

dressing
  • lime juice
  • olive & peanut oil
  • some sesame oil (roasted) for seasoning
  • smoked salt
  • some soy
  • pepper
  • brown sugar

Greekish Salad

The other half of the
  • Chinese cabbage
has to go.  But today is all about Greece.

Add
  • half a red pepper
  • a nice quantity of green olives sliced
  • spring onion
  • some peperonis, chopped
  • feta, crumbed
and dress with
  • lemon juice
  • olive oil
  • mustard
  • cream
  • salt, pepper
  • sugar

Crunchy Yumyummy Noodle Salad

This recipe may sound a little odd, but was absolutely tasty.

Find a package (any flavour is fine really, I recommend hot&sour soup) of
  • instant noodles (waiwai, yumyum, something like that)
Chop up a
  • 1/2 a Chinese cabbage (thin stripes)
and place in bowl. Cover with the smashed, uncooked noodles
  • some coriander and
  • spring onion and
  • some fresh red chili, chopped.

Now for the dressing you want
  • the soup powder that came with the noodles
 Use that as seasoning together with
  • the juice of a lime
  • a little soy sauce and 
  • some sesame oil (roasted) and
  • some peanut oil.

Kumato & Pointed Pepper Salad

Apart from the fancy cultivars, this is nothing out of the ordinary:

  • pointed peppers
  • Kumato tomatoes (greenish-red cultivar)
  • onion rings
  • feta
  • parsley
  • some pickled peperoni

simple dressing made from
  • lime juice
  • olive oil
  • salt
  • pepper

Fennel and Orange Salad with Basil & Cream

  • fennel, sliced thinly
  • orange filets
  • basil

for the dressing:
  • 1 shallot, finely chopped
  • white balsamic vinegar
  • juice from cutting the oranges
  • smoked salt
  • cream
  • some olive oil
  • orange marmalade
  • some brown sugar

Show-off Winter Salad

 Not your ordinary salad this one:
  • corn lettuce
  • 2 boiled corn cobs, cut into stripes
  • chestnuts, baked/roasted
  • cress
dress to impress:
  • half a shallot, chopped or blended
  • lots of honey
  • a little mustard
  • white balsamic vinegar
  • vegie broth
  • some pepper

Steamed Parsnip, Apple and Cucumber Salad

Another healthy winter salad!

Steam some cubed
  • parsnips
in broth until just tender. Save some of the broth and add to dressing.

Chop up an
  • apple
  • half a cucumber
Dressing:
  • sweet orange jam
  • salt, pepper
  • vegie broth
  • olive oil
  • white balsamic vinegar
  • walnuts 
for topping!

Parsnip and Corn Lettuce Winter Salad with Apricots

For this one, wash and dry the
  • cornlettuce
peel the
  • parsnip
and cut it into flakes using a peeler.

For the dressing use
  • some vegie broth
  • white balsamic vinegar
  • olive oil
  • apricot jam
  • salt, pepper
  • a finely chopped small shallot
Chop some
  • dried apricots
and throw them into the dressing. Best have them soak for a while.

Mix just before serving.

Cucumber Salad with Sour Parsley Cream

  • 2 large cucumbers,
chop and remove seeds.
  • lots of fresh parsley, chop very finely or blend
  • half a shallot, chop finely
  • juice of a lemon
  • salt
  • brown sugar

combine these first before adding the
  • sour cream
  • and a little bit of olive oil.

Winter Salad with Pears, Cucumber, Mushrooms and Walnuts

Hard to find anything too appealing at this time of the year, that has not air travelled across half the globe.

For this salad you need equal quantities of

mushroom
cucumber
pear

all cut into cubes.

Add some chopped

walnuts

and make a dressing from

white balsamic vinegar
honey
olive oil
salt, pepper
half a shallot, chopped very finely.
