Shredded beetroot and mushroom salad

  • beetroot, raw, grated
  • mushrooms, raw, grated
  • smoked tofu, grated
  • pea sprouts
  • some walnuts
  • cress

  • shallot, chopped finely
  • lemon juice
  • salt
  • brown sugar
  • olive oil
  • sesame oil, roasted
  • sambal oelek

Small big beans

  • bell beans broad beans fava beans, whatever you prefer to call them: those.
  • 3 spring onions
  • 1 red pepper
  • 1 red chili
  • some coriander
  • smoked tofu
  • pickled cucumbers/gurken

  • 3 chopped sundried tomatoes
  • lemon juice
  • roasted sesame oil
  • olive oil
  • soy sauce
  • some brown sugar
  • mustard

Mix well, and, last, sprinkle with some paprika powder. You could also add walnuts.

Iceberg & apricots

  • shallot, chop finely, drizzle with
  • lemon juice, add
  • honey & orange marmalade, salt
  • olive oil, and dress
  • iceberg, cut into stripes, with it. Top with
  • fresh apricots, salted
  • almonds
  • hazelnuts
  • fresh coriander

Make a sauce from

  • tahini
  • hot water
  • lemon juice and
  • salt

and serve this as extra dressing.

  • peperoni, slices

  • salt
  • pepper
  • veggie broth
  • lemon juice or white balsamico
  • sundried tomato
  • some sugar to taste

  • some veggie broth
  • olive oil
  • lemon juice

  • soy sauce

mix with
  • broad beans

and add
  • tomatoes

  • cucumber

#300: Paneer Tikka Salad

Another famous international dish gone salad! About time we are saladizing India.

We had this with
  • cucumber
  • tomatoes and
  • fresh coriander
  • paneer (Indian cottage cheese)
But all the magic, naturally, is in the spices. For the dressing, use
  • Red chilli powder
  • Fennel powder
  • Mango powder (Amchur)
  • Kitchen king masala
  • Chat masala
  • Lemon juice
  • Coriander
  • Curry leaves
  • Grated Ginger
  • Grated Garlic
  • Cumin
  • Honey
  • Yogurt
  • Olive oil
  • Salt

  • jack beans
  • radishes
  • mixed sprouts
  • parsley + coriander
  • sunflower seeds
  • 3 sundried tomatoes, chopped

dressing:
  • olive oil
  • a little sesame oil
  • lemon juice
  • salt
  • shallot

topping:
  • tahini, add some 
  • hot water and 
  • salt and 
  • lemon juice until nice and creamy

Chickpea, Avocado and Hazelnut Salad

  • 1 chopped shallot
  • lime juice
  • soy sauce
  • veggie broth
  • orange marmalade (bitter)
  • regular cold press and roasted sesame oils
  • sambal oelek

  • chickpeas
  • celeriac, grated
  • parsley
  • 1 chopped sundried tomato
  • hazelnuts
  • raisins
  • 2 avocados

Spaghetti and Spinach Salad

Soak some
  • instant noodles
in
  • boiling water with vegie broth
Don't use too much water, we want to save the broth. Add some
  • sliced sundried tomates
Cover and sit for a few minutes.

Create a dressing from
  • grated ginger
  • lime or lemon juice
  • the broth
  • sesame oil
  • peanut oil
  • soy sauce
  • wasabi

Mix noodles and
  • baby spinach
Add
  • some spring onions
and pour over dressing. Sprinkle with
  • sesame seeds
