A very basic salad: cucumbers, tomatoes, a sweet pepper and an onion.
With a very basic dressing: olive oil, vinegar, some salt and black pepper.

Cabbage Tomato Salad
Even more cabbage. :) But this time with a bit of tomatoes and a simple dressing.
The salad mastermind is on vacation so we were not very creative today.

Chinese Cabbage Experiment
More cabbage!
To start with, and an hour ahead of serving time, slice some nice juicy ginger really finely, and soak it in a glass, together with some lemon or lime juice, light soy sauce, some sugar, salt to bring out the juice, a chopped onion (and, for the expert, some orange marmalade, because the jar sitting in our fridge is still not empty...) and put it aside to soak.
Cut the cabbage, also really finely, and put it in the bowl.
Squeeze in (violently, through your own hands, come on!) a nice tomato, so it goes nice and mushy and blends in with the dressing.
You could also add some red chili or paprika to this mixture, but the cabbage should stay the main ingredient taste-wise.
Now what would really be nice with this is some roasted sesame oil.
Pour over ginger mixture and allow some marinading time before serving.
Sprinkle with some sesame seeds.

Kohlrabi Donation Salad
No shopping today, so we had to survive on what was there ... this wasn't looking too promising a day until ...
Wundersalat received it's first very generous donation: 2 unclaimed, beautiful kohlrabis!
So here we are:
2 kohlrabis, peeled & cut very thinly
an orange, also cut thinly, some orange peel
some english orange marmalade
almonds as seen in picture, dried chili flakes
olive oil, white balsamic vinegar, salt, a shallot

Beet Splatter
Now, let me see if I remember anything else, apart from the person complaining who had to grate the beetroot ... Watch your favourite shirt, this colour is lethal.
Grated (raw!) beetroot, onion, appel, almond slivers, olive oil, lemon juice, salt, some sugar
You can literally feel haematosis kicking in while eating this, seriously.
Not-so-special-salad-that-someone-ended-up-really-liking
two cucumbers (seeded), some of what Edeka embarrassingly calls "Partytomaten" (red and yellow), some fresh coriander if you like, some chopped sundried tomatoes, 1 red pepper
the twist for the dressing is to chop the shallots really finely (almost mashed) and use the oil of the sundried tomatoes (+ a little extra olive oil), juice of 1 lemon, salt, pepper and some dried flaked chilis (we are abusing wunder salat's absence to do the spicy stuff)
please excuse the photo, the artist is out.
try this despite of the photo, all it takes is a little courage ...
and I want a proper camera for my birthday. thank you.

if you add some feta, which is nice, obviously this recipe will loose it's veganinity

Pretend Russian Potato Salad without Potatoes
Get some: cooked beetroots, pickles (cornichons), a green apple, boiled eggs & onion
I so don't remember what I put in the dressing: some mayonaise, lemon juice, salt, o-oil, vinegar I guess ...
I smell winter!

Ha! Mango Chili Feldsalat
Now, friends: I personally think this one was to die for, though we are lacking documentation on this one as Wunder is on holidays ...
You need: One ripe sweet soft mango, corn lettuce (Feldsalat), 1 red chili, fresh coriander
dress with: lots of lime juice, soy sauce, a shallot, some oil
And be sure to have a peanut butter sandwich to go with it!
Aahhh ...
