Couscous with Raisins and Saffron
As a side dish for two:
1 finely chopped shallot
1 finely chopped smaller carrot
1 small orange with edible skin
3 tablespoons of raisins
100g couscous
250g broth
saffron
cinnamon
curcuma
pepper
salt
a bit of butter
Soften raisins in hot water, let them really sit for awhile. Saute shellot and carrot in butter. Prepare couscous with broth instead of water. Add into it: saffron, cinnamon, curcuma, pepper and also shallot and carrot, raisins and grated orange peel.
