Ah. Like my mum does it:
1 butterhead lettuce (Kopfsalat), wash well and plug apart
1 shallot, lemon juice, salt, pepper, sugar, cream and some olive oil for the dressing. You want it lemoney, but not too sour. Try to have the finely chopped shallot sit in the juice for a bit if you can. This dressing will really unfold if you can afford to leave it alone for a bit.

Winter Salad with Smoked Tofu
Telegram style today, but do try this if you like a good smokey single malt, the smokeyness may not be for salad beginners :) Though one of them was witnessed to enjoy this.

Fermented Mushroom Salad
A little out of control today ...
We created a marinade from soy sauce, some juice of the balsamico pickled pearl onions, olive oil and some finely chopped candied ginger pieces,
chopped the mushrooms into fine pieces, added them to the marinade and had them sit a little. Cut some mozzarella into small cubes, add to marinade, add some of the pearl onion also, and a little lime juice if handy.
This part is the true invention, we had it with some ordinary roma salad and added a bit of finely chopped carrot but you can do a lot of playing around with the base I imagine ...

Mixed Tomato-Mozzarella-Rocket Salad
Wash the rocket and some small tomatoes.
Open the mozzarella and some small pickled onions.
Cut all ingredients and mix gently.
For the dressing use: olive oil, white balsamic vinegar, lemon juice, sweet mustard, salt and pepper.
And if you want to go crazy, add some nuts on top of everything.

Celery salad with Tabasco dressing & Walnuts
Celery, cucumber, some tear-drop tomatoes, preferably yellow. Walntus.
The dressing: Finely chopped shallot, then add some dark balsamico, tomato juice, some Tabasco - careful, the stuff IS hot. Olive oil. Salt.
You can add some dill or crumbled sheep's milk feta.

Almond-Carrot-Sweetcorn-Salad with Coriander
Oh, ah. different. yet tasty. summer! somewhere, sometime. we remember you.
OK, here is to some colour:
You need
1 can of sweetcorn, a bunch of carrots, cut in cubes and some very roughly chopped almonds. Mix and top with some fresh coriander.
Dressing
juice of 1-2 limes, oil (olives, peanut would also be nice), 1 finely chopped shallot, some tabasco sauce, orange marmalade, honey, salt.
Took me a long time to learn that "marmalade" is spelled in a funny way in English. Why?

Rocket Artichoke Olive Salad
Like our inspiration for today’s salad, this one is easy and fast to prepare.
Just take some lettuce and rocket, a can of pickled artichokes and black olives. Wash and cut the salad, cut the artichoke into quarters and add the same ratio of black olives. Then just mix gently and add the dressing.
For the dressing: balsamico, olive oil, sweet mustard, salt and pepper.

Hazelnut Capsicum Bean Salad
Start with finely chopping a small onion, soak that in some lemon juice, and dissolve some bitter orange marmalade in the mixture. Add salt, black pepper and lots of olive oil, and pour over the green beans to sit for a minute.
We used a can of green beans for this - I guess fresh wouldn't harm, either, if season allows.
Slice 1 red capsicum, throw in some rocket, mix gently to not hurt the beans and sprinkle with some roughly chopped hazelnuts. Then call the photographer.
This received a lot of applause!

Pearl Onion Tomato Salad
Make sure to make this with some decent tomatoes. Cut into cubes, add some halved pearl onions, preferably marinated in balsamic vinegar. Seeded black olives, some fresh basil.
A small chopped shallot, nevertheless.
For dressing, combine some of the onion marinade if nice, lemon juice, olive oil, salt and coarse black pepper.

Kind of Greek Salad
An easy starter for this year: tomatoes, cucumbers, feta, a big yellow pepper, an onion and some olives.
Plus a very simple dressing made of: olive oil, vinegar, salt and black pepper.
And it was very tasty!
