  • some soy

Kidney beans

Some Danish agurker
Shallot
Sambal oelek
Mayonnaise
Some jam
Salt, pepper
Oil and lemon or orange juice

Mexican Salad, sort of

avocados
cherry tomatoes
celery
sweet corn
kidney beans, if desired

tabasco, chili fakes
ginger marmalade
lime juice
olive oil
brown sugar
parsley or coriander
shallot or spring onion

Monday

Some radiccio, cut into fine stripes.
Some sweetcorn.
Some brown lentils.
Pumpkin seeds,
Some mint and a little parsley.

Ginger and orange marmalade to make the dressing nice and sweet.
Olive oil, lemon juice, salt, pepper, a shallot, some sesame oil for extra flavour if you wish.

Mock Frog

Next we have number 4, Crunchy Frog: This is another one of those clear-out the fridge salads. With love from the Hygiene Squad.
 
Cucumber, sliced
carrot
canned sweetcorn
shallot

some fresh coriander
backerbsen - fried batter balls, like Indian boondi
peanuts

For the dressing, dissolve some peanut butter in a little hot water until you have a liquidy, creamy consistency. Add sambal oelek, some soy sauce and only a little lemon juice.

Add dressing just before serving to avoid the batter balls going all soggy. If we took the bones out, it wouldn't be crunchy, would it?

Guest Starring: MSZ, again! Red-and-Yellow Raddicchio Sweetcorn Salad

Remember Miss Smashing Zauberstab? Turns out she doesn't need her Zauberstab to do magic. She's aiming for the Salad Queen throne with a real beauty. She says:

"Summer blessed us with a variety of vegetables and we just grabbed what we saw at the greengrocer's. When the amazingly red radicchio turned out to be quite bitter, we had the brilliant idea to mix it with sweetcorn – a blazing combination!

This is how it goes:
Cut up the radicchio in small stripes, same with a green pepper, and add a can of sweetcorn. For the dressing: use spring onions, white balsamico, oil and orange juice – mix or shake with salt, pepper and mustard and that´s it."

And it looks yummy, damn it.

1980s Retro-Style German "Mexican" Party Salad

Oh, the parties of the 80s ... who could bear to relive them. As an act of compassion, we altered the memory of them a little. Wasn't that part of it, anyway?

canned sweet corn
olive oil (did we know there was something other than sunflower oil then? not sure.)
lemon juice (that would have been the exotic zaz)
onion
paprika (aka capsicum - would likely have been green then, but is red and yellow in this case)
carrots
some black olives

some added feta is nice to make this less vegan (did we know the word vegan back then?)
also, some parsley would have been good.
kidney beans, naturally are also missing in this one ....

Almond-Carrot-Sweetcorn-Salad with Coriander

Oh, ah. different. yet tasty. summer! somewhere, sometime. we remember you.

OK, here is to some colour:

You need
1 can of sweetcorn, a bunch of carrots, cut in cubes and some very roughly chopped almonds. Mix and top with some fresh coriander.

Dressing
juice of 1-2 limes, oil (olives, peanut would also be nice), 1 finely chopped shallot, some tabasco sauce, orange marmalade, honey, salt.

Took me a long time to learn that "marmalade" is spelled in a funny way in English. Why?
