Finally the winter is coming to an end and the spring is just around the corner.
In the spirit of various traditions which celebrate that we decided to make a salad with lots of colours.
So we had:
- red beetroots
- green cucumber
- yellow paprika
- orange carrots
- white parsnip
- and the blue bowl, of course :)
For the dressing we used: olive oil, lemon juice, honey, salt and pepper.

Basilbalsami (Tomato Salad)
Lots of basil, lots of tomatoes, some delicious balsamico onions, that was basically it.
The special magic only went into the dressing/topping today.
Chopped shallot, olive oil and lemon, so far, so good.
Then something sweet. Some sugar would do. Salt, pepper, and some of the balsamico onions had been sitting in. Watch that it does not get too sour. Some feta crumbs mixed with some chopped sundried tomatoes.
And: some deep-fried garlic slices.

Curled Root Veggies on a Strange Monday
Winter keeps sitting out there with strong perseverance so what can we do, really, but go back to our rootsy winter friends.

Hate me for the chili jam and use something else instead. Some red marmalade and sambal oelek maybe.
It was good, too, it really was. Please excuse the depressed winter language.
It is even better with the feta-walnut topping from Vegetarian Blutwurst Salad
P.S. What I find REALLY unfair is that hayfever season has started despite the fact that spring has not.

Double Mushroom Miracle
Yes! While innocently preparing today's salad, in the middle of winter kitchen darkness, we where suddenly graced by the spontaneous manifestation of a Bahrenfeld Sunrise!

Flaked Winter Veggies
celeriac, pear, brown mushroom - "flake" all of these with a vegetable peeler
optional: corn lettuce - but I tend to think it is not actually needed. Be adventurous and leave it out.

Kohlrabi Donation Salad V2

and it works pretty much the same.
Some finely chopped onion to start with, drowned in some freshly squeezed orange juice.
Orange marmalade and some white balsamic vinegar, salt, olive and a drop of sesame oil (careful).
Kohlrabi, thin slices, and a sliced apple. Top with almond and chili flakes.
See? I know I'll get told off for the the bad picture.

Vegetarian "Bohnen, Birnen und Speck" Salad
Now, this is the salad adaption of a traditional northern German stew: Bohnen, Birnen und Speck (beans, pears and bacon).
You can use green or pole beans, blanched - nice and crunchy, don't overcook them.
a pear, not too soft, sliced into "flakes" with a vegetable peeler
smoked tofu
sundried tomatoes, chopped
crispy roasted onion (the last three are to imitate the "bacon" taste)
For the dressing we also added a fresh onion, some marmalade (orange), lemon juice, olive oil - and a drop of sesame oil could actually enhance the smokeyness even more. Salt, pepper. A little soy sauce.
Super-fancy, and not much work - enjoy! We loved it.

Beetroot Bean Salad with Vegetarian Danish Hot Dog Topping
Oh God, I think we went a bit overboard today. But this firework has potential for at least 3 separate, simpler recipes.
First of all, we are introducing some thrilling new technology: some fresh beans were sliced quite finely and then blanched with a little boiling water.
Beetroots - as we never seem to grow tired of them. Sorry. And a yellow paprika was also sitting in the fridge, what can you do.
Now for the "danish" topping: finely chop some pickled gurken ("agurker") and mix with some hot dog style roasted onion ("ristede løg").
We added some crumbed feta and cress, but if you really want to make this hot dog, then you should go for some seitan sausages instead. I would have.
Dressing was simply, oil, mustard, honey, white balsamico and salt, and likewise, could be dansked even more with some yellow remoulade.
Velbekomme.

Artichoke Tomato Salad
Artichokeeeees! :) Very simple and easy.
Two cans of marinated artichoke hearts, drained and quartered. Some tasty tomatoes, not plastic please!
Feta cheese is preferred but if you don't have it Parmesan is fine as well.
For the dressing use: olive oil, lemon juice, an onion and salt and pepper.
