a tiny bit of pickled celeriac, if you so wish, but it is really totally unnecessary. Call it the random ingredient.

Dimljeni Sir Salad with Horseradish Dressing

I apologize in advance for the "You will need some Bosnian smoked fresh cheese that you will not be able to get anywhere"-bit. Don't you find it gruesome when people show off not only with the lovely salad you will probably never eat, but also with the nice holiday they just enjoyed.

Sorry.

The basis of this is some simple

corn lettuce

though, and I think you can get away with replacing the

dimljeni sir

with some

Scamorza

if, that is, you can get that.

a few radishes
a chopped shallot

and, for the dressing:

lime juice
dijon mustard
olive oil
mayonnaise
horse radish
salt
and lots of honey.

Corn Lettuce with Brazil Nuts, Brie, Radish and Cranberry Dressing

Yesterday's lunch table brainstorming turned into something seriously yummy:

Corn Lettuce
Small white radish, if available flaked with veggie peeler
I was also thinking pear flakes, but we may be happy with just cranberries for now.

Some brie cheese, preferably not so soft
Brazil nuts, very roughly chopped
Some dry cranberries

Cranberry jam (Preiselbeeren im Glas)
Shallot
White balsamico
Olive oil
Salt, pepper, a little veggie broth

Private Entertainment

Autumn delights were looking too tempting today to let this one pass unnoticed:

I got a small hokkaido pumpkin at the market, boiled the cubes in some veggie broth and preboiled ginger slices (i had those as I am constantly drinking fresh hot ginger water to fight the approaching cold) until tender.

This goes nicely with the corn lettuce that is in season again.

Dress with
a small onion
fresh red chili
olive oil
lemon juice
some sesame oil
salt or soy sauce
honey

Top with pumpkin and sesame seeds

Introducing: Chanterelle Pfifferling

Chanterelle? Honestly, this sounds like a creepy, modern girls' name. Let's just call them Pfifferlinge.

I fried the pfifferlinge with some smoked tofu, sunflower seeds, olive oil and a tiny bit of soy.
A base of corn lettuce, radishes, parsley and cress for topping, and a dressing with
shallot, lemon juice, salt, pepper, sugar or honey, olive oil, yoghurt.

Flaked Winter Veggies

celeriac, pear, brown mushroom - "flake" all of these with a vegetable peeler
optional: corn lettuce - but I tend to think it is not actually needed. Be adventurous and leave it out.

roasted onion
shallot
olive oil
lemon juice
some water
sugar
salt, coarse black pepper, a little fresh rosemary if handy
a little soy sauce and sesame oil

Mushy Mango

1 soft ripe mushy mango
a little bit of chili and sesame seeds for fancy topping
fresh coriander

some corn lettuce
cucumber cubes, watery seeds removed from middle
yellow tomatoes

soy sauce
lime juice
peanut oil
some ginger-lemon jam marmalade in this case, but well, that mango was sweet enough so don't bother or replace
some roasted sesame oil
the usual shallot, chopped

Salad #50 with Creamy Mustard Dressing

Salad friends! This is number 50! And yet ever so simple.

Some radicchio
Some corn lettuce
Some radishes ...

And a dressing made of: shallot, cream, some senfgurkenwasser but never mind if you don't have any, sugar, lemon juice, salt, mayonnaise, whole seed mustard (lots), some fresh dill - capers for those who don't hate them

Not unlike with Mustard Eggs (Senfeier :) the point here is not to be healthy, but to drown the stuff in sauce/dressing. You can basically have it with anything.
