Curled Root Veggies on a Strange Monday

Winter keeps sitting out there with strong perseverance so what can we do, really, but go back to our rootsy winter friends.

flaked raw beetroot
parsnip
zucchini
parsley
lemon
olive oil
shallot
salt
pepper


Hate me for the chili jam and use something else instead. Some red marmalade and sambal oelek maybe.

It was good, too, it really was. Please excuse the depressed winter language.
It is even better with the feta-walnut topping from Vegetarian Blutwurst Salad

P.S. What I find REALLY unfair is that hayfever season has started despite the fact that spring has not.

1980s Retro-Style German "Mexican" Party Salad

Oh, the parties of the 80s ... who could bear to relive them. As an act of compassion, we altered the memory of them a little. Wasn't that part of it, anyway?

canned sweet corn
olive oil (did we know there was something other than sunflower oil then? not sure.)
lemon juice (that would have been the exotic zaz)
onion
paprika (aka capsicum - would likely have been green then, but is red and yellow in this case)
carrots
some black olives

some added feta is nice to make this less vegan (did we know the word vegan back then?)
also, some parsley would have been good.
kidney beans, naturally are also missing in this one ....

Tabbouleh

From the exotic oriental world of the middle east comes this tasty salad called Tabbouleh. It makes a fine addition to that region's cuisine which dishes are known to be somewhat greasy and prominently contain meat (such as Kibbeh and Sfiha). Tabbouleh is very refreshing thanks to the combination of lemon and tomatoes and parsley, and the inclusion of Burghul (also known as Bulghur) and onion and dried mint gives it a unique taste you'll never forget.

Tabbouleh is very popular in middle eastern countries, and you can usually order it in most middle eastern delicatessens, or you can easily prepare it yourself, here's how to do that:

The first step is to put 2 tablespoons (~15ml each) of Burghul in a glass of water.

Then, these ingredients should all be added in a big bowl:
  • Half an onion, cut to small pieces (assuming the size of the onion is roughly the size of tomato. also, a small onion would also work).
  • 1 band of parsley (cut the leaves only and into tiny pieces).
  • 1 normal-sized tomato (as opposed to the small cherry tomatoes).
  • 1 teaspoon (~5ml) of dried mint leaves (basically mint in a form similar to salt...).
  • 1 squeezed lemon.
  • 3 tablespoons (~15ml each) of olive oil.
  • Some salt.
The recipe is for two to three people.
