Shredded beetroot and mushroom salad

  • beetroot, raw, grated
  • mushrooms, raw, grated
  • smoked tofu, grated
  • pea sprouts
  • some walnuts
  • cress

  • shallot, chopped finely
  • lemon juice
  • salt
  • brown sugar
  • olive oil
  • sesame oil, roasted
  • sambal oelek
