Bruschetta Salad

Take some
  • dry bread
from the day before. Soak it in a little bit of water if need be, otherwise just break it into pieces and soak it with the juice of your chopped
  • tomatoes. Add
  • lemon juice
  • salt, pepper
  • shallot
  • parsley
  • black olives
and pour over some
  • olive oil.

Add some mixed bruschetta spices if you like. Garlic would be nice, too.

This is a nice way to make use of left over bread.
