Grilled Eggplant Salad with Spinach, Cottage Cheese and Sesame
tomatoes
grilled eggplant
spinach
coriander/parsley leaves
olive oil
tahini
sesame seeds
orange jam
smoked salt
lemon juice
some crumbed feta and/or cottage cheese

Delicious Warm Pepper Salad with Tahini
Grill some
mixed peppers
with
2-3 quartered shallots,
sprinkled with a bit of olive oil
Keep the juice.
When done, add
chickpeas
black olives
some almonds
tahini
lemon juice
orange jam or honey
paprika powder
smoked salt
fresh coriander leaves

Mexican Spring Appetizer (as we imagine it)
avocados
lettuces (butterhead & spinach)
spring onion
mango (not too sure about the mango situation in Mexico)
green chilis
dressing
yoghurt
olive oil
lot of orange marmalade (not so sure about the orange marmalade situation in Mexico)
salt&pepper
no sweetcorn
no beans
coriander to taste
lime juice
mustard

Lukewarm Bean Salad
tomatoes, lots
Cut into quarters and grill or microwave with
an onion, chopped on top
black olives
olive oil
a teaspoon of veggie broth powder
pepper and
paprika powder, preferably smoked
Once done, add
beans
smoked tofu and or
a sundried tomato to taste, and a few
baby spinach leaves
and a bit of lemon juice
Serve warm.

Easy Iceberg and Avocado Salad with Peanut Dressing
iceberg
avocado
some cucumber
coriander leaves
Dressing:
peanut butter (crunchy)
dilute with a bit of hot water
sambal oelek
coconut milk
soy sauce

Warm Rosemary Goat's Cheeses on Baby Spinach
goat's cheese, gratiné with
honey and
rosemary
Sit this on
baby spinach and add
a few cherry tomatoes
Sprinkle with
toasted or caramalized walnuts
Dressing
olive oil
dark balsamico
honey
rosemary or smoked salt
pepper
