Orange Spinach Salad

  • baby spinach
  • mango or orange
  • orange pepper (if available)
  • multicolour tomatoes
  • black olives to taste

  • shallot
  • orange marmalade
  • freshly squeezed orange juice
  • some white balsamic vinegar
  • smoked salt
  • some roasted sesame oil
  • peanut oil
  • sambal oelek

Warm Rosemary Goat's Cheeses on Baby Spinach

  • goat's cheese, gratiné with
  • honey and
  • rosemary
Sit this on
  • baby spinach and add
  • a few cherry tomatoes
Sprinkle with
  • toasted or caramalized walnuts

Dressing
  • olive oil
  • dark balsamico
  • honey
  • rosemary or smoked salt
  • pepper

  • avocado

  • cress

  • shallot
  • lime juice
  • maple syrup
  • smoked salt
  • veggie broth

Green Bean Green Olive & Tomatoe Salad

  • green beans (steamed or canned)
  • cherry tomatoes
  • half a red pepper

  • some green olives, slices
  • fresh parsley

  • 1 shallot
  • lemon juice
  • sugar
  • salt
  • pepper
  • mustard
  • olive oil
  • yoghurt

Chickpea and Thyme Salad

Start with the dressing. Chop
  • 1 shallot
and pick leaves of
  • a few twigs of fresh thyme
  • juice of half an orange, half a lemon
  • cold press sesame oil
  • a little olive oil
  • pepper
  • some vegi broth
  • a spoonful of tahini
  • 2 finely chopped sundried tomatoes

Ideally, have this sit with
  • 1 can of chickpeas
  • black olives
  • cherry tomatoes
  • feta to taste

Sprinkle with pine nuts.

Orange and Tomato Salad with Olives

  • filets of 2 oranges - one blood, one plain, if you want to make this extra fancy
  • a nice mix of red and yellow cherry tomatoes
  • black olives, chopped into slices
 You can have the olives soak in the dressing for a while actually:
  • lemon juice
  • sweet orange marmalade (lots)
  • some juice of the chopped oranges
  • some parsley
  • shallot, chopped
  • pepper, salt
  • olive oil, or some walnut oil will also be nice
  • a bit of ginger juice, if you like it.

Insalata Trappanese - Spaghetti Salad Jamie Style

You will need some cold boiled spaghetti for this.

Some zucchini, cut into spaghetti shaped stripes
Cherry tomatoes
Lots of basil
Almonds, crushed
Raw sea salt
Parmesan, grated
Coarse black pepper
Olive oil

Lightly beat all the latter in a mortar, then mix with spagehtti.

If you can, roast the almonds.

If you leave out the zucchini, this can be made as a delicious pesto.

Herbs & Tomato Salad

Very simplistic today:

We got some

Basil, parsley & coriander leaves. Chop roughly
Tasty cherry tomatoes. Chop into small cubes.

Dress with
Olive oil and lemon juice
Salt, pepper
Shallot
A little dijonnaise, maybe

Top with pine nut. Preferably roasted ones.

tabasco, chili fakes
ginger marmalade
lime juice
olive oil
brown sugar
parsley or coriander

Spicy Avocado Zucchini Tomato Colour Explosion Salad

Even this summer is unlikely to get any brighter, and hotter, than this:

Avocado, cubes
yellow zucchini
cherry tomatoes
some parsley for topping

For the neon orange dressing, we are taking advantage of Wunder's absence this week. Some like it not-so-hot, if I may say so.

1 small onion/shallot, and a tiny bit of fresh garlic chopped so finely it is almost purreed - you could also blend it.
sambal oelek, more than usual
3 teaspoons of mayonnaise
lemon juice
olive oil
salt, sugar

Sunglasses, for looking at it.
All time top ten, dead serious.

Gueststarring: Ausländerin

Loosely crafted after Mark Bittman's NY Times recipe, our tastebuds were hit by a wild surprise creation of unforgettable Ausländerin today, one of Wundersalat's earliest followers and most observant fans. The attack was launched so sneakily clever, that even some super sceptic salad beginners ("This is not even green") accidentally fell for it.

Here we go:

a good water melon, if you don't get a decent one, forget all about this endeavour in the first place. Cut into cubes
feta cheese, crumbs or cubes
spring onion
cherry tomatoes
olive oil
some water melon juice caught when chopping
white wine vinegar
salt, pepper

some black olives would also be nice, we were thinking ... and the original also has parsley and a pinch of cayenne.

Hugest salad turn around ever at frogster office. Bang.

Summer Attacks / Neon Salad

Ah, colours! We're not done with the seasons yet.

Cut up one cucumber, remove seeds from middle, cube.
2-3 mild red chilis - remove seeds, cut into stripes
Mango - cubes
some colourful cherry tomatoes
some cashews
coriander  would have been nice, we did not have any

dressing: lime juice, soy sauce, peanut oil, some sesame oil, orange marmalade

Spring Beauty

Now I had never heard of this kind of lettuce before. She is called and definetely IS a spring beauty.

You tomatoes, you spring onions, you chopped chili, you rest of yesterdays roma lettuce: You are all just extras on the side enhancing her glamour.

Dressing: olive oil, some water, salt, lemon juice and orange marmalade.

What can I say.

Swimming Chickpeas

Cucumber
some yummy cherry tomatoes (non-party)
chickpeas
fresh parsley

Tahini
lemon juice
garlic
salt
some hot water to dissolve the tahini
some olive oil, not a lot
chopped onion
yoghurt

Be generous with the dressing

some olives and feta are missing in picture, add if desired.
