I have a feeling we must have done something along the same lines if not exactly the same salad before. But that's the great thing about great ideas that come with a bad memory: you can have them more than once!
So here we go.
Baby spinach. Wash and dry.
And the rest is all dressing:
Lemon juice
Some thin slices of juicy fresh ginger (use peeler)
Soy sauce
Peanut Oil
Sesame oil (roasted)
A red chili
Some sesame seeds
And red onion cut into very thin rings ... have them soak in dressing a little
A tiny bit of garlic.
I was tempted to put some instant noodles as well, but did not quite follow through. Try it as variation on a hungry day.

Parsnip and Carrot Winter Salad
Parsnip - cut into flakes with peeler
Carrots - flakes of thin slices
Apple - thin slices
Walnuts.
Dressing:
Shallot
Lemon juice and lots of good olive oil
Honey
a little soy sauce

Chickpea Salad with Parsley Yoghurt Dressing
In this case, it's best to start with your dressing and allow to sit and soak a little while you are taking care of everything else.
For the dressing
chop some fresh parsley quite finely (you can also give it a few smashes in the mortar to make the flavour come out more)
a shallot, chopped
cover this with lemon juice and salt
olive oil
a little brown sugar
and put the yoghurt in last.
For the rest you need
1 can of chick peas
a carrot, cut in tiny cubes
some pearl or balsamic onions
sundried tomatoes, preferably the non-oily kind
and we added a little grated celeriac, but that does not go as a must.
Enjoy.

Curly Carrots & Sprouts with Peanut Sauce
We probably did something similar before, not because we are boring, but because it is just so yummy ...
Carrots are cut into curls with a peeler.
Sprouts.
Fresh coriander.
And some radishes.
Peanut sauce:
Peanut butter, I prefer it crunchy. Dilute with a little hot water to dissolve.
Coconut milk or cream.
Sambal oelek
Soy sauce.

Herbs & Tomato Salad
Very simplistic today:
We got some
Basil, parsley & coriander leaves. Chop roughly
Tasty cherry tomatoes. Chop into small cubes.
Dress with
Olive oil and lemon juice
Salt, pepper
Shallot
A little dijonnaise, maybe
Top with pine nut. Preferably roasted ones.

Yellow Salad
I admit this recipe relies heavily on the quality of ready made curry sauce you get. Besides that, you will need:
