half a red pepper
some green olives, slices
fresh parsley
1 shallot

Jack Bean & Tomato Salad
1 can of white (jack) beans
tomatoes
parsley
thyme
some sundried tomatoes
some marinated mushrooms
1 shallot
lemon juice

some soy sauce
salt to taste

Cucumber & Senfgurken Salad with Pears
Simple simple:
cucumber
mustard pickle (Senfgurken)
pears
1 shallot, chopped
honey dissolved in a tiny bit of warm water
salt
white balsamic vinegar
olive oil
some mustard seeds from the pickle jar

Extended Cucumber Salad
Just the
1 cucumber
wouldn't have fed us all, so we added some
tomatoes and
lettuce
Dressing:
shallot
lemon juice
salt, sugar
dill (fresh, if available)
cream
a little olive oil can be sprinkled directly on the vegetables

any colourful peppers you find

seasoned salt (with garlic, if available) - we had a fancy mix donated that contained garlic and some other mixed herbs

2-3 cherry tomatoes, chopped or crushed

1-2 chopped sundried tomatoes

white asparagus, boiled

Fusion Salad
grated may turnips

some crumbs of feta

horseradish

salt
top with
some smashed instant noodles
coriander
Also possible to give this a more Asian twist with spring onion and by using soy sauce, ginger, and peanut oil instead of cream and salt.
