Couscous with Raisins and Saffron

As a side dish for two:

1 finely chopped shallot
1 finely chopped smaller carrot
1 small orange with edible skin
3 tablespoons of raisins

100g couscous
250g broth

saffron
cinnamon
curcuma
pepper
salt
a bit of butter


Soften raisins in hot water, let them really sit for awhile. Saute shellot and carrot in butter. Prepare couscous with broth instead of water. Add into it: saffron, cinnamon, curcuma, pepper and also shallot and carrot, raisins and grated orange peel.

Dolce Insalata

Ingredients:
- Lettuce mix - Pflücksalat (Eichblatt, Spinat, Rucola)
- 1 Red pepper
- 1 Pomegranate
- 1/2 Sheep cheese

Dressing:
- Olive oil
- Balsamico vinegar
- Honey
- Salt, Pepper

Glass Noodle Salad

  • glass noodles

cover with boiling water or broth, drain when tender

  • carrots, thin stripes (obtained with a veggie peeler)
  • cucumber, thin stripes
  • red chili
  • spring onion
  • coriander
  • chopped cashews
  • roasted sesame seeds

  • lime juice
  • peanut oil
  • soy sauce
  • ginger marmalade

Salad with Chickpeas and Pomegranate

  • cucumber
  • chickpeas
  • pomegranate
  • orange to taste
  • parsley

  • shallot
  • lemon juice
  • olive oil
  • yoghurt, a little cream to taste
  • turmeric
  • salt, pepper
  • ginger marmalade

Glass Noodles W/O the Glass Noodles

  • cucumber
  • carrot
  • red pepper
  • bamboo
  • onion to taste 
  • coriander

all chopped in 'julienne' fashion (thin stripes)

  • lime juice
  • sambal oelek
  • soy sauce
  • peanut oil
  • roasted sesame oil
  • tom yum spice mix
  • peanuts
We will re-do this salad with the actual glass noodles next week. Glass noodles can be found in either noodle or Asia section of your reliable local supermarket and are sometimes also known by the name vermicelli.
