It's: Use-Up-that-Pickled-Ginger-Day

We are still clearing out the fridge to make room for a fresh salad season.  The only thing left to get rid of really, is a jar of pickled ginger.

That goes nicely with some
smoked tofu, finely chopped
lime juice (be generous)
soy sauce
sesame oil
and a bit of garlic

Combine all that to marinate a little,
add some sesame seed, red chili, freshly chopped, de-seeded.
Some sunflower seeds or cashews.

Cucumber, de-seeded, cut into cubes
fresh coriander leaves.
Some crunchy danish roasted onions.

Home is where the bowl is

Aah, we're back. Did anyone notice we were gone?
Not super back yet, maybe, we'll pick up slowly with a variation of an old Wundersalat classic from anno 2012, while that summer slowness starts wearing off:

Cooked beetroot, sprinkled with a bit of honey and salt, and olive oil
an apple
feta

Tahini
lemon juice
salt
some hot water
some garlic

Some sesame seeds for topping.

Surprising salad again.

Ingredients : cucumber, marinated mushrooms, green olives and cottage cheese.

Dressing: olive oil, vinegar, lemon juice, honey, onion, salt and pepper.

Guest Starring: MSZ, again! Red-and-Yellow Raddicchio Sweetcorn Salad

Remember Miss Smashing Zauberstab? Turns out she doesn't need her Zauberstab to do magic. She's aiming for the Salad Queen throne with a real beauty. She says:

"Summer blessed us with a variety of vegetables and we just grabbed what we saw at the greengrocer's. When the amazingly red radicchio turned out to be quite bitter, we had the brilliant idea to mix it with sweetcorn – a blazing combination!

This is how it goes:
Cut up the radicchio in small stripes, same with a green pepper, and add a can of sweetcorn. For the dressing: use spring onions, white balsamico, oil and orange juice – mix or shake with salt, pepper and mustard and that´s it."

And it looks yummy, damn it.

Beets'n'Beans with Mint

Cooked beetroots, cut into a kind of french fry shape.
Wax beans, boiled until just tender, with enough salt.
Some chopped mint leaves.
Some feta crumbs.

A red onion, chopped.
Lemon juice, vinegar, olive oil, orange marmalade, salt, pepper.

Goodbye, Snowman


Today is a very sad day as I broke my favourite snowman cup when emptying the dishwasher : (
No more snowman coffee, ever.

Documentation, nevertheless, must go on:

We had:
some roma lettuce
cooked beetroots (hello!)
artichokes
carrot

a piece of red onion, mixed with juice of a freshly squeezed orange, orange marmalade, balsamico, sweet mustard, olive oil.

Introducing: Chanterelle Pfifferling

Chanterelle? Honestly, this sounds like a creepy, modern girls' name. Let's just call them Pfifferlinge.
































I fried the pfifferlinge with some smoked tofu, sunflower seeds, olive oil and a tiny bit of soy. 
A base of corn lettuce, radishes, parsley and cress for topping, and a dressing with
shallot, lemon juice, salt, pepper, sugar or honey, olive oil, yoghurt.

Streetview Salad

Not that much street  in this salad after all, but hey. I also also realize I never obtained permission for doing panel format. Is that OK?

Avocado
lots of parsley
tomatoes
zucchini
artichokes
green and black olives

Dressing:
half a red onion, micro sliced/blended
mayonnaise
Dijon mustard
sugar
olive oil
lemon juice
salt

I know. Bikini diet week again next week. Or week after next, when I am taking that new bikini to the beach : ) Too late now.

Savoury Fruit Salad

Super simple, super soft and super yummy ... and all this time I was surrounded by salad talents that kept themselves hidden!

a ripe sweeeeeeet mango (one of those yellow, sugary ones, not the firm kind that leaves you with orange threads in your teeth)
a soft avocado
a red onion

a simple dressing made from
lemon juice
olive oil
and a little white wine vinegar
salt, pepper

Given the dominant sweetness of the mango that is even enhanced by the salt, the dressing can actually be quite sour.

Spicy Avocado Zucchini Tomato Colour Explosion Salad

Even this summer is unlikely to get any brighter, and hotter, than this:

Avocado, cubes
yellow zucchini
cherry tomatoes
some parsley for topping

For the neon orange dressing, we are taking advantage of Wunder's absence this week. Some like it not-so-hot, if I may say so.

1 small onion/shallot, and a tiny bit of fresh garlic chopped so finely it is almost purreed - you could also blend it.
sambal oelek, more than usual
3 teaspoons of mayonnaise
lemon juice
olive oil
salt, sugar

Sunglasses, for looking at it.
All time top ten, dead serious.

Lazy Days - Zucchini Salad

Just try not to move whatsoever in this heat, and you'll be OK.

Minimal salad art of the day.

1 small green zucchini
1 small yellow zucchini
a carrot
some spring onion
some feta crumbs for topping

lemon juice
orange marmalade
salt, pepper
olive oil






























And hopefully tomorrow I will have learned how to focus ...
But prepare for a demise in visual quality for the next 2 weeks - the artist is out.

Tuesday's Variation

has a bit of roma lettuce
shallots instead of spring onions
some kernels
and the carrots seperated for saving an allergic intern's life.

The olives, however, were totally unnecessary.
