Pickled Celeriac & Pear Salad

• pickled celeriac, slices
• smoked tofu, slices
• pear, slices
• some lamb's lettuce to fill up the bowl if you like

• a shallot
• white balsamic vinegar
• brown sugar
• salt
• olive oil
• a little bit of pumpkin seed oil
• a drop of soy sauce to taste
• pepper

Lychee & Iceberg Salad with Peanuts

lychees
red pepper, likewise
iceberg
spring onion
coriander leaves
peanuts
red chili
some smoked tofu

lime or lemon juice
soy sauce
peanut oil
sesame oil
ginger juice

Cucumber Beetroot Salad with Orange Tahini Ginger Dressing

• cucumber
• cooked beetroot

• tahini, dilute with a little hot water
• freshly squeezed orange juice (and you can put some orange pieces, too)
• some white balsamico
• salt
• some fresh ginger juice
• orange marmalade
• some sambal oelek

• coriander
• walnuts 
• some fried onions, if desired

Bohnen-Birnen-Speck-Re-Make

But it is pretty much the same recipe, re-invented 2 years later : ) We should have this more often than once every 2 years.

So while we are waiting for the NASA recipe to come through (they eat salad in space), we shall just rest comfortably on our laurels.

Hearty corn cob & spinach salad

• baby spinach, some
• roasted or cooked corn, slices cut from cob
• red pepper
• various tomatoes, different colours

• spring onion

• sundried tomatoes
• some smoked tofu,

Both chopped very finely so add as topping.

Dressing:

• lemon juice
• sambal oelek
• roasted sesame oil
• some mild olive oil
• sweet orange marmalade, lots
• salt

Adventurous Salad

• lamb's lettuce
• tomatoes
• avocado
• spring onion
• parsley
• fresh plums, slices finely
• walnuts, chopped
• chili

• lemon juice
• a little bit of a nice fruity vinegar (cassis in this case)
• some sugar
• some soy sauce
• some smoked salt
• peanut oil (in lack of walnut)
• olive oil
• veggie broth
• paprika powder 
• a little bit of garlic
• crispy fried onions

Another "Best Ever" Mango Salad

mango, chopped in stripes if you can manage
red pepper, likewise
spring onion
some tomatoes (should not be many in relation to mango)
coriander leaves
peanuts
red chili

lime juice
soy sauce
peanut oil

Mixed Lettuces & Chanterelle with Yoghurt Dressing

Mixed lettuces:

• baby spinach
• lamb's lettuce
• curled lettuce

• parsley
• spring onion
• some sundried tomatoes, chopped

• flakes of fresh chanterelle mushrooms

Dressing:

• lemon juice
• white balsamic vinegar
• a tiny bit of mustard
• sugar
• smoked salt
• some drops of sesame oil (roasted)
• olive oil
• yoghurt
