Post-Christmas Creative Salad

Ah this was much better then we expected. While the great salad master is far a way from us we tried to be creative on our own. We nicely cut and put together some carrots, tomatoes, maize and  radicchio. And for the dressing we used: olive oil, vinegar, salt, pepper and and all the spices we could found in the kitchen. :)

And I can tell you it was very good, much more than we expected.

Pre-Christmas Fruit Salad

What kind of fresh fruit do you get here in Winter? We cut up some apples, banana, oranges and tired kiwi. Sliced some dried figs thinly, and had those sit in some apple-orange-lemon juice to soak up the liquid. Some raisins and you can throw some other dried fruit that you like. Lots of nuts, like pistachios and walnuts here, some cinamony weihnachtsmarkt lebkuchen spice mix (be careful with that though, not too much), some chili flakes and thin slices of fresh ginger.
To sweeten, we only put the juice and a little bit of maple sirup.
Served nicely with some plain yoghurt and maple sirup to top.

Simple Vegetables

Ah, it was so simple and beautiful. We had just nicely cut vegetables and a yogurt dressing.
And I can tell you it was served so nicely that I didn't have a chance to take a picture of the dressing.
Everyone became hungry almost immediately! :)

Chick Pea Carrot Feta Mash - impro style

Now, with most of the salad makers lame, invalid or just afraid of the cold, no shopping today.

We threw together some carrots, feta, tomatoes, chick peas.
Lemon juice, olive oil, an onion, salt, coarse black pepper and fresh parslyey for the dressing.

Hear me, this is not too bad at all.

Feld-Wald-und-Wiesen Salad

Corn lettuce and brown button mushrooms (the brown ones have a nice, earthy taste - slice thinly), some cherry tomatoes, maybe.

Dressing: finely chop a shallot/onion, sprinkle with sugar and salt to extract juice. Add some olive oil & lemon juice. Plain yoghurt. Mustard, some mayonnaise maybe, and some coarse black pepper.

Vegetarian Blutwurst Salad

Cooked Beetroot, sliced
Top with some "real" feta (sheep's milk), crumbled, mixed with some crumbled walnuts.
Dressing: some fresh rosemary leaves, cut into tiny bits, freshly squeezed orange juice, some balsamico, olive oil, salt, pepper, sweet mustard.

Cucumber & Carrots dressed in Pretend Saté Sauce


finely slice cucumber & carrots (a vegetable peeler is good for the carrots, you want this to look BEAUTIFUL), fresh coriander leaves.

for the dressing: dissolve a generous spoonful of peanut butter with a little hot water. add coconut milk and sambal oelek, and a little lime juice, but not too much, and some soy sauce for the savoury taste.

Green beans and antipasti salad

We are living on our supplies today.
1-2 red peppers, 1 glass of cooked green beans, 1 glass of marinated mushrooms, some black olives, feta.
Lemon juice, olive oil, salt, pepper, 1-2 shallots for a simple dressing.
Some fresh parsley.
