Red Salad with Beets and Pickles

Beetroot (raw, thinly sliced, works best with a veggie peeler), apple (sliced), green olives, a small glass of Senfgurken (mustard pickles, says LEO) and some of their water.
Dressing: olive oil, honey, chopped onion, lemon juice, salt, a little bit of vegetable broth if fluid is not enough to dissolve the: grated horseradish (from a glass or tube)

Orange Radicchio Salad / dear wunder:

If I am still in the interview at salad preparing time, you could:

cut up the raddichio (thinnish stripes)
slice the radieschen (radishes)
peel orange and cut into thin slices, quartered (pips removed). Any excess orange juice from cutting can go in the bowl.

and, if time, finely chop one shallot for the dressing which will be:

orange marmalade, white balsamico, olive oil, salt & pepper

But I should be able to take care of that.

Mannheim Wunder

Super quick, super yummy, I need to share this from on the road:

Throw some corn lettuce (yes, it is still winter) on plate, decorate with flakes of raw beetroot, pear and brown mushrooms - sliced off with a vegetable peeler (we need to get one, homies). Top with some sprouts and walnuts.
Dressing to sprinkle on top: sweet mustard, mix of black and white balsamicos and a little lemon juice, olive oil, salt, pepper.

Landslide Salad

I forget what was in this, but I liked the photo :)

It looks like chick peas, roma, feta, black olives, tomato, cucumber. The dressing, again, has some fresh rosemary in it. Basic o-oil, lemon juice, salt, pepper, onion.

So we had some carrots and cucumbers with olives and feta cheese. A bit strange combination but tasted quite good.

Light Ceasar Salad

Well not exactly Ceasar salat but there was lot of light. :) And yeah, it tasted similar.

So simple and easy: lettuce, tomato and parmesan with mayonnaise dressing.



Triple Tomato Salad

For this, we used two different kinds of fresh and some sundried tomatoes.
The oil for the dressing had been pre-used to marinade some feta, you could also use some of the sundried tomatoes marinade if they were sitting in oil - though that tends to be sunflower, and I highly recommend a good olive oil to the full flavour out of these tomatoes.
And onion, chopped. Some fresh rosemary, salt and coarse black pepper.

Rosemary, Fig & Goats Cheese Salad with Baby Spinach or Corn Lettuce

If only I had a frying pan & stove, I would deepfry the rosemary and use the oil for the dressing.

Ah, the dressing! Quite finely cut up some fresh rosemary, leaves removed from twigs, and soak them  in honey (lots!), olive oil, a little of the whole seed mustard, but not too much, juice of half a lemon. Add quite a bit of salt to the dressing to balance the honey's sweetness, even a tiny bit of soy sauce can be good. Let it sit a bit, if possible.

Also, if you can, have your dried figs sit in bit of boiling water before you start cutting them. They will grow! and look almost fresh.

As greens, we used corn lettuce for this one - it being winter, and the baby spinach wasn't looking too good. Try either, I'd say! I have a feeling the spinach is going to boost this recipe to even greater heights.

Last, cut up a roll of goats cheese in bite size portions. Combine with figs and leaves. Just prior to serving, sprinkle with with rosemary honey dressing.

Carrot & Celeriac - CC Salad

Easy. Yummy. Fast.

But oh, not every office kitchen has a good grater, aua-aua. So if you want blood ...

You need:
Some carrots, greated. The rest of yesterdays celeriac, peeled and grated. An apple - could be greated, but may as well be cut up if the person grating things has already hurt his fingers badly.
Some almonds please, again.
An onion, but you can leave that in this case.
Lemon juice, olive oil, salt and some honey :)


Spicy Lentil Salad

For this recipe, lacking a stove and the time, we used some pre-cooked canned brown lentils.
Pistacios. Carrots, celeriac. Fresh parsley (the curly kind). An onion, finely chopped. Sundried tomatoes. Good olive oil, some lemon juice. The twist for the dressing are some unusual spices: some Garam Masala, e. g., or the good old Lebkuchengewürz. To make it extra fancy, you may even want to use some seeds like cumin, fenugreek, brown mustard and toast them in a frying pan for fragrance ...

We'll be playing around with this a little.


Pretend Cesar Salad

OH so super simple:


cut up two roma salads
for the dressing, combine some mayonnaise, lemon juice, mustard with seeds, salt, pepper, honey.
toss, and generously sprinkle with parmesan flakes.

Chick Pea Salad with Dried Figs

oh, what a day. some brain food needed:

mix some cooked chick peas, carrots cut in little cubes, fresh parsley and rocket (cut). throw in some pistacios to show off.

for the dressing, chop an onion or shallot, add some lemon juice, olive oil and honey, a bit of fresh ginger, garlic if you dare and like, salt, pepper. then cut some dried figs in very thin slices and have them marinade in the dressing for a bit.

some added feta is nice, too.
