Tannenwald

Cut up some smallish, tasty tomatoes, place in an ovenproof dish, cover with pieces of goat's cheese, some rosemary needles (these are the tannenwald), salt, pepper, and honey. Put in oven for about 15 mins, until soft and yummy, or microwave.

While tomatoes are in oven, create a bed of rocket and mushroom slices in your salad bowl. Make simple dressing from shallots, lemon juice, olive oil, a little soy to taste.

When tomatoes are ready, let cool for a bit, then place on top, and make sure to also make use of the delicious juice!

Chef Salad with Sautéed White Asparagus

I admit this one was not tested in the cold office kitchen, but was too yummy to hide it from the lights.

Peel some fresh white asparagus and cut into mouth size pieces. Heat olive oil in frying pan, fry asparagus, and an optional finely chopped shallot for extra aroma. Add honey to glaze and a bit of salt.

Cut up some romaine salad and throw fried asparagus pieces on top. Take pan from heat and add a bit of water to scrape out all the lovely aroma stuck to bottom. Add some mayonnaise (I went for an eggless, vegan variant for the first time and must say I am seriously impressed!) to dressing and pour over salad mix.

Top with some parmesan flakes and croutons made from sourdough bread.

So good. Hello spring time!

The Re-Invention of Iceberg

Facing the challenge after two years. Will we succeed to breathe some life into what I always took for the most tasteless vegetable in the world? Today, we are tackling the iceberg.

iceberg, chopped
spring onion

lime juice
sesame oil
soy sauce
a chili
ginger marmalade
coriander leaves

Sprinkle with sesame seeds and some chopped cashews.

I cannot think of an appropriate Celine Dion line to quote ... lucky you.

Orange Kohlrabi

Fairly simple. Peel and cut up your

kohlrabi and
1-2 oranges

You can even arrange the slices in a caprese-like fashion if you need to show off.

Sprinkle with almonds and a dressing made from:

the orange juice you poured from your chopping board when slicing oranges
again, with some help from a lemon or white balsamic vinegar if orange lacks zinge
salt, a little soy sauce, even
peanut oil, sesame oil
orange marmalade, maybe a little honey
a red chili
a shallot, finely chopped.

Enjoy!

salt
honey
mustard
shallot or no shallot - I think we could have gone without it.

dressing is a bit uninspired today, I'd be happy for some suggestions.
