Garden Salad à la Langeland with Rasberries

The weather was so much nicer in the Danish Caribbean ... Lazing outside on the terrace with the long lost relatives ... Finishing off a huge bowl of salad, hard to lift for one person on their own ...

Here's to Schubi the Chef and her creation:

leafy mixture of lettuces
cucumber
tomatoes
spring onion
radishes
fresh parsley
and lovage, if available

for the dressing, you can roast some
sunflower seeds in a pan olive oil

add soy sauce, then remove from heat
add dark balsamico
honey (generous)
dijon mustard
salt + pepper

 or just combine all these, without the roasting

Salat (French American Retro Island 2013)

Today is retro day.

Remember? Back in the 80s, when ordering a Salat somewhere, you would have received something like this. And, mind you, I spared you the iceberg, which was more or less a synonym for lettuce for a loooong dull time. Best thing about it was the choice of dressing: "French" or "American" or "Thousand Islands" ... We'll try something inbetween ... all those islands.

lettuce
cucumber
tomatoes
sweetcorn

the French-American-Island Dressing goes like this:
barbecue tomato sauce
remoulade/mayonnaise
some cream
white vinegar
mustard
salt, pepper
and, as a concession to the new millenium, some fresh parsley - the only know fresh herb back then

Let me add we skipped dessert and had some malzbier instead.

Fake Leberkäs' Salad

I know, I know ... I admit it could prove to be tough to go shopping for vegetarian Leberkäse in Indonesia and Botsuana ... So please don't get annoyed with us and consider this Germanic oddity just for your folksy entertainment. For us Hamburgers, believe me, it is as exotic an experiment as it may seem for you.

Fake Leberkäse, a soy product, readily available at your valued supermarket. If not, complain
Cornichons, pickled cucumbers, gurken
radishes
fresh parsley
the added avocado, of course, is totally out of place and I would be ashamed to admit where it came from, but was kind of nice

olive oil
a shallot
whole grain Dijon mustard
salt, pepper
white wine vinegar
some honey, honey

Rastafari II / "Deutsch mit Salat", advanced level

yellow tomatoes
pomegranate (thanks)
some red chili or pepper, I'd say, would be nice
spring onion
cucumber
and a few leaves wild garlic, when in season, but spinach would go with this ...  just play with this a little. little concept behind this recipe today. if you want concept, go back to yesterday's posting. My mind's wandering, and already on holidays. see you week after next.
bamboo

dressing:
lime juice
soy sauce
peanut oil
wasabi
sesame oil
orange marmalade

Tropical Cucumber Salad

Hello.

Today is cucumber and mango day. We had this planned all week. Once more, we'll not only prove talent to dash out yet another super recipe, but also to ignore Hamburg rain and pretend we live on a tropical island.

you want: a little more cucumber than mango, cut them into roughly the same shape
1 red chili
fresh coriander
spring onion
some peanuts for topping

to dress, use lemon juice, soy sauce, peanut oil, put into the almost gone chili jam jar together with some orange peel marmalade and cocktail shake with a firm, yet gentle diagonal movement, wrist loose and relaxed.

Double Rastafari Salad

1 shallot, chop, cover with lemon juice and olive oil (yellow)
a little tabasco
chili jam (red)
salt and coarse black pepper
some wild garlic (green)

1 soft avocado will make the dressing extra creamy
fresh coriander (green)
canned mini corn cobs (yellow)
kidney beans
tomatoes (red)

Except by one passionate disliker of kidney beans, this creation was well received ;) No beans tomorrow, promise.

This is nice with some cheddar chunks on the side.

Creamy Cucumber Garden Salad with Egg-Dill Topping

cucumber
lettuce (e. g. some mixed baby leaves)
a little wild garlic (Bärlauch)

mayonnaise / remoulade
dissolve with some milk
some lemon juice
1 - 2 finely chopped shallots
salt
boiled egg, finely chopped
fresh dill

White Asparagus Salad

1 glass of white asparagus - or of course you can steam fresh, too
3 eggs
1 avocado
some capers
1 chopped shallot
some pear
some lettuce

remoulade
dissolve with some milk
salt
a tiny bit of lemon juice and/or white balsamic vinegar

A tiny bit late: Oranje

To celebrate our neighbour's special occasion, we'll start with the super sophisticated royal dressing for a change:

1 orange, peeled and chopped into quite small pieces, allowing it to go quite soupy, but also leaving some chunks
lots of orange peel marmalade, and enough salt to balance it out
some white balsamic vinegar
1 shallot, finely chopped
1 red chili, chopped finely
some cashews, chopped
olive oil
a little sesame oil
chopped fresh coriander leaves
and some sesame seeds.

for the salad base, just cut up some roma salad and a a bit of cucumber.
