Lamb's Lettuce with Mushrooms and Mini-Kumatos

  • lamb's/corn lettuce
  • brown mushrooms, slices thinly
  • baby kumatoes
  • some sunflower seed or pistachios
  • a shallot
  • some lemon juice and we used some fancy cassis vinegar here
  • honey
  • some vegi broth
  • salt, smoked if you have
  • pepper
  • a blend of toasted & and cold press sesame oils, and admittedly, some drops of olive (sometimes it's hard to stay minimalistic)
  • some dried thyme

Chickpea and Thyme Salad

Start with the dressing. Chop
  • 1 shallot
and pick leaves of
  • a few twigs of fresh thyme
  • juice of half an orange, half a lemon
  • cold press sesame oil
  • a little olive oil
  • pepper
  • some vegi broth
  • a spoonful of tahini
  • 2 finely chopped sundried tomatoes

Ideally, have this sit with
  • 1 can of chickpeas
  • black olives
  • cherry tomatoes
  • feta to taste

Sprinkle with pine nuts.

Lovely creamy lentil-sweetcorn-mango salad

Part of the credit of this salad being so surprisingly yummy goes to the super soft sweet juicy mango and its donator. Heaven.

Mix some
  • cooked brown lentils and
  • sweetcorn
equal parts.

pour over dressing made from
  • a shallot
  • sambal oelek
  • lemon juice
  • brown sugar
  • soy sauce
  • olive oil
  • cold press sesame oil
  • some chopped peperoni

Then add chopped
  • avocado
  • mango and
  • coriander

Smokey Marinated Mushrooms and Celery

We had some
  • jarred marinated mushrooms
and threw in some
  • smoked tofu
to marinate with them over the weekend.
  • 2-3 celery sticks, chopped
  • chickpeas would have been nice, but we only had brown lentils
  • some yellow tomatoes

Dressing
  • 1 small shallot, finely chopped
  • mushroom marinade
  • lemon juice
  • some soy
  • some smoked salt
  • pepper
  • some chopped peperoni
  • a few drops of toasted sesame oil

Asparagus, Celery and Avocado Salad with Oranges

A lovely, creamy, very special salad.

You will need some
  • cooked or jarred white asparagus (green is also fine)
  • 3 celery sticks
  • 1 avocado
  • 2 oranges, cut into filets, juice saves to go in the dressing

  • juice of 1/2 lemon
  • 1/2 shallot, finely chopped
  • bitter orange marmalade
  • salt, pepper, a little sugar
  • cream

Mango & Radish Salad with Tomatoes

  • mango
  • radishes
  • red pepper
  • tomatoes
  • fresh coriander

  • half a shallot, finely chopped
  • juice of half a lemon
  • some brown sugar
  • mango chutney
  • red chilis
  • a little twist of soy sauce
  • some dry vegi broth
  • olive oil

Baby Spinach with Mango & Avocado

  • baby spinach
  • avocado
  • mango
  • spring onion

  • orange juice
  • lemon juice
  • some sesame oil
  • chili
  • olive oil
  • orange marmalade
  • some soy sauce
  • salt, a pinch of smoked salt if available

  • some sesame and nuts for topping, if you like

Green Salad with Apricots, Olives and Cheddar Crumbs

  • lettuce
  • some dried apricots
  • 1 avocado
  • black olives, chopped
  • crumbed vintage cheddar
 
  • lemon juice
  • walnut oil (maybe adding a little olive)
  • orange jam, sweet
  • salt, pepper
  • mustard

Beetroot and Potato Salad

For this beauty, you will need:
  • boiled potatoes
  • cooked beetroot
  • some pickled gurken
  • half a red or pointed pepper
  • half a tomato or so
  • some parsley
  • half an apple would also be nice
Dressing goes like this:
  • lemon juice
  • onion
  • a little bit of olive oil
  • sugar, salt
  • mustard
  • yoghurt

Orange and Tomato Salad with Olives

  • filets of 2 oranges - one blood, one plain, if you want to make this extra fancy
  • a nice mix of red and yellow cherry tomatoes
  • black olives, chopped into slices
 You can have the olives soak in the dressing for a while actually:
  • lemon juice
  • sweet orange marmalade (lots)
  • some juice of the chopped oranges
  • some parsley
  • shallot, chopped
  • pepper, salt
  • olive oil, or some walnut oil will also be nice
  • a bit of ginger juice, if you like it.
