Glass Noodle Salad

A real treat today, absolutely worth the walk to the Asian grocery store if your local supermarket is not super equipped:

glass noodles
cover with boiling water, then drain

mung bean sprouts
carrot
red pepper

cover with hot water/broth for a bit, then drain and save some of the broth

red chili
fresh coriander
peanuts
spring onion

soy sauce
a bit of broth
peanut oil
sesame oil
lime juice
grated ginger

As this was seriously yummy, I dare say we are now officially back.
