Mixed Lettuces & Chanterelle with Yoghurt Dressing

Mixed lettuces:
  • baby spinach
  • lamb's lettuce
  • curled lettuce

  • parsley
  • spring onion
  • some sundried tomatoes, chopped
  • flakes of fresh chanterelle mushrooms

Dressing:
  • lemon juice
  • white balsamic vinegar
  • a tiny bit of mustard
  • sugar
  • smoked salt
  • some drops of sesame oil (roasted)
  • olive oil
  • yoghurt

Introducing: Chanterelle Pfifferling

Chanterelle? Honestly, this sounds like a creepy, modern girls' name. Let's just call them Pfifferlinge.
































I fried the pfifferlinge with some smoked tofu, sunflower seeds, olive oil and a tiny bit of soy. 
A base of corn lettuce, radishes, parsley and cress for topping, and a dressing with
shallot, lemon juice, salt, pepper, sugar or honey, olive oil, yoghurt.
