Now, this is the salad adaption of a traditional northern German stew: Bohnen, Birnen und Speck (beans, pears and bacon).
You can use green or pole beans, blanched - nice and crunchy, don't overcook them.
a pear, not too soft, sliced into "flakes" with a vegetable peeler
smoked tofu
sundried tomatoes, chopped
crispy roasted onion (the last three are to imitate the "bacon" taste)
For the dressing we also added a fresh onion, some marmalade (orange), lemon juice, olive oil - and a drop of sesame oil could actually enhance the smokeyness even more. Salt, pepper. A little soy sauce.
Super-fancy, and not much work - enjoy! We loved it.
