Frogtoberfest

Inspired by tasty 'Bavaria' and eatsmarter.de

• lamb's lettuce
• red radishes, grated
• some bergkäse, grated or 'flaked'
• mild onion rings
• parsley

• sweet mustard
• brown sugar
• apple juice
• pumpkin seed oil
• salt, pepper

Add some 'lye pretzel croutons' (slice thinly, brush with a little oil and toast)

Pretzel Salad

Somewhat expanding on yesterday's octoberfestish approach of rural South Germany.

For all of those likers of wurst salad out there. And those afraid of even the thought of it.

This one is with
Bergkäse/Suisse cheese cut in stripes
some stripes of smoked tofu
onion rings
red radishes
pickled gurken
black olives
some pickled red peppers though those are not essential.

Dress with vinegar, oil, sugar, salt, pepper, mustard, some soy and gurkenwater.

And, of course, crumbled pretzels as a topping!
