Shredded beetroot and mushroom salad

  • beetroot, raw, grated
  • mushrooms, raw, grated
  • smoked tofu, grated
  • pea sprouts
  • some walnuts
  • cress

  • shallot, chopped finely
  • lemon juice
  • salt
  • brown sugar
  • olive oil
  • sesame oil, roasted
  • sambal oelek

Small big beans

  • bell beans broad beans fava beans, whatever you prefer to call them: those.
  • 3 spring onions
  • 1 red pepper
  • 1 red chili
  • some coriander
  • smoked tofu
  • pickled cucumbers/gurken

  • 3 chopped sundried tomatoes
  • lemon juice
  • roasted sesame oil
  • olive oil
  • soy sauce
  • some brown sugar
  • mustard

Mix well, and, last, sprinkle with some paprika powder. You could also add walnuts.

Broad Bean and Tomato Salad

  • broad beans
  • tomatoes
  • smoked tofu
  • spring onion
  • half a pear
  • parsley

  • some seasoned sunflower oil
  • some soy sauce
  • some sambal oelek
  • a dash of roasted sesame oil
  • smoked salt
  • bitter orange marmalade

A lovely green bean salad, not unlike the one we made ages ago

2 cans of green beans

And the real magic is in the jar again:

Put some pickled onions and some of their marinade
some soy
some lemon juice
olive oil
a little sesame oil
some smoked salt
sundried tomatoes
pears
parsley
and smoked tofu

in a jar and allow to sit for a bit if you can. Then just add to to the beans. This is good!

smoked salt
a little oil if required

some fresh parsley and a few crispy onions

Carte Blanche Salad

Today I got carte blanche from Tante Kerni to put anything I want in the salad and then she will make a nice dressing to fix things up. :)

So I challenged with:
- baby spinach
- thinly sliced red radishes
- striped smoked tofu
- soft goat cheese
- black olives


and got response:
- rouille
- mustard
- olive oil
- raw sea salt
- white balsamico
- honey
- orange marmalade
- a little mayonnaise or yogurt

Pretzel Salad

Somewhat expanding on yesterday's octoberfestish approach of rural South Germany.

For all of those likers of wurst salad out there. And those afraid of even the thought of it.

This one is with
Bergkäse/Suisse cheese cut in stripes
some stripes of smoked tofu
onion rings
red radishes
pickled gurken
black olives
some pickled red peppers though those are not essential.

Dress with vinegar, oil, sugar, salt, pepper, mustard, some soy and gurkenwater.

And, of course, crumbled pretzels as a topping!

Mock ham and melon salad

honey dew/rock melon
smoked tofu
sundried tomatoes
coriander leaves

soy sauce
lemon juice
peanut oil
roasted sesame oil

I recently saw something in the forbidden section of my way-too-fancy supermarket that I am dying to try: smoked salt, or, most probably "smoked fleur du sel" that is, at least I hope so to justify the price. In case you happen to have, or happen to recently have been given for your 39th birthday, some smoked salt, please use it in this recipe and tell me what it's like.

Irish Moon Landing

The moon is made out of cheese, we all know that. What is not so widely known is that it is in fact made out Irish Cheddar, and that the Irish were first in conquering it (thus the green flag).

So: Someone will have to grate the celeriac. And the carrots, unless you want to use jarred.
Smoked tofu, here we go again. Chop finely.
Radish, some, slice.
Cheddar, chop
Shallot
Some parsley
Pumpkin seeds

Dressing
Barbecue sauce
Olive oil
A little twist of lemon juice
Orange marmalade
Salt, pepper.

Season 3

Season 3, had you ever wondered, is autumn.

Finely chop:
smoked tofu
celeriac, also some from the jar again I admit, as I like the pickle taste ...
red onion

some tomatoes went in as well as
some carrot slices

sprinkle with a mixture of
sprouts
roasted danish onions
raw sea salt
sunflower seeds
pumpkin seeds (Halloween approaching)
sesame seeds

dressing:
lemon juice
olive oil
sesame oil
ginger marmalade
some soy sauce
some celeriac water (from pickle jar)

I probably forgot something else.

Yes: the apple slices.

Hmm ...

Sprouts Galore

Note: This recipe involves yet another high tech challenge: the boiling of Brussels sprouts.

Sentence of the day: It's already done.
Everything I tried to do today had already happened.
Wink, wink. Who reads our blog?

The Brussels sprouts: already boiled, nicely.
Not too soft, not too crunchy.
Already chopped in half.

Already covered with
Danish fried onions
sprouts - some short kind, lentil, radish ...
sundried tomatoes and smoked tofu,
chopped finely
raw sea salt


To round this off, just add lemon juice and olive oil.

It's: Use-Up-that-Pickled-Ginger-Day

We are still clearing out the fridge to make room for a fresh salad season.  The only thing left to get rid of really, is a jar of pickled ginger.

That goes nicely with some
smoked tofu, finely chopped
lime juice (be generous)
soy sauce
sesame oil
and a bit of garlic

Combine all that to marinate a little,
add some sesame seed, red chili, freshly chopped, de-seeded.
Some sunflower seeds or cashews.

Cucumber, de-seeded, cut into cubes
fresh coriander leaves.
Some crunchy danish roasted onions.

Vegetarian "Bohnen, Birnen und Speck" Salad

Now, this is the salad adaption of a traditional northern German stew: Bohnen, Birnen und Speck (beans, pears and bacon).

You can use green or pole beans, blanched - nice and crunchy, don't overcook them.
a pear, not too soft, sliced into "flakes" with a vegetable peeler
smoked tofu
sundried tomatoes, chopped
crispy roasted onion (the last three are to imitate the "bacon" taste)

For the dressing we also added a fresh onion, some marmalade (orange), lemon juice, olive oil - and a drop of sesame oil could actually enhance the smokeyness even more. Salt, pepper. A little soy sauce.

Super-fancy, and not much work - enjoy! We loved it.

Tante Kerni's (Hot!) Home Story

Now, friends, usually we don't do anything that involves HEAT, because the office kitchen, that we prepare our salads in, does not have a stove. And the lunch break is too short for lengthy preparation.

But potatoes ... ah, they just don't taste any good if you buy them pre-boiled. So as a concession to THE archetype of German "vegetable"/salad, some playing around with potatoes was long overdue.

Easy, quick, naturally. We are at home, but we are still lazy.

Potatoes, beetroot - cut into chunks and boil them together. Throw in the eggs at half-time.
While boiling, chop onion and add it to some oil and lemon juice. Salt. Chop some pickled gurken (cornichons).

Add egg, potatoes and beetroot once boiled.

Chop avocado and some smoked tofu. Top with some toasted sesame oil and seeds.

Some mayonnaise or yoghurt is nice for those who don't avoid it.

Winter Salad with Smoked Tofu

Telegram style today, but do try this if you like a good smokey single malt, the smokeyness may not be for salad beginners :) Though one of them was witnessed to enjoy this.

beetroot, cooked
apple - slices
smoked tofu, thinly sliced
some celeriac, tiny cubes
some, not many sliced mushrooms

olive oil
sweet mustard
orange marmalade
lime juice & some white balsamic vinegar
salt, pepper
finely chopped onion
