Cut up one cucumber, remove seeds from middle, cube.
2-3 mild red chilis - remove seeds, cut into stripes

some colourful cherry tomatoes
some cashews
coriander would have been nice, we did not have any
dressing: lime juice, soy sauce, peanut oil, some sesame oil, orange marmalade

Spring Beauty
Now I had never heard of this kind of lettuce before. She is called and definetely IS a spring beauty.
You tomatoes, you spring onions, you chopped chili, you rest of yesterdays roma lettuce: You are all just extras on the side enhancing her glamour.
Dressing: olive oil, some water, salt, lemon juice and orange marmalade.
What can I say.

Spring at last!
Today's the day, no more lamenting! Or as someone smarter said to me this morning: We sprung spring, and are going straight for summer. No lame daffodils and snowdrops, we have wasted enough time already.
Out of sheer excitement though, we managed to forget to go shopping, so this building up the dramaturgy thingy goes down the drain with the following recipe:
cooked beetroot, cut into little cubes
some romaine lettuce, chopped
a tin of brown lentils
some sesame seeds and feta crumbs for visuals
to dress, dissolve some tahini in hot water, finely chop a shallot, add some lemon juice until creamy. salt. some olive oil to support Greece, can also be omitted.
Eat up fast and enjoy the sun, friends! We deserve it!

Lame Tin Salad, renamed: "Salad from Nowhere" ...
... as it did manifest out of thin air, i. e. no supplies, only preserves and a little basil that appeared by surprise.
1 can of green beans
1 glass of marinated mushrooms
some black olives
some fresh onion, finely chopped
crispy roasted onions
some lemon juice
some blood orange juice
lots of pepper
salt
olive oil (and some of the mushroom marinade)
a little fresh basil
some feta on the side is nice.
And what can say, what started off looking very much post nuclear disaster ended up being pretty tasty!
Enjoy.

Colour of Spring Flower
Spring is coming, so we are bringing on
some colours too. Inspired by some of the tiny flowers
sticking already out from the grass, we composed this “light pink
on dark green” Salad.
You need 3 main ingredients: rucola
salad, feta cheese and a fresh beetroot. Wash and dry the rucola, and cut the
beetroot and feta into quarters.
Now prepare an onion-balcamic dressing:
take half a small onion and cut it into tiny slices, add white
balsamic vinegar and oil. Mix this together with mustard and add
honey, pepper and salt to it. Then add it to the salad an carefully
mix, after two minutes white and green will melt into a light pink
that looks pretty crazy on the dark green rucola.
