Spring is coming, so we are bringing on
some colours too. Inspired by some of the tiny flowers
sticking already out from the grass, we composed this “light pink
on dark green” Salad.
You need 3 main ingredients: rucola
salad, feta cheese and a fresh beetroot. Wash and dry the rucola, and cut the
beetroot and feta into quarters.
Now prepare an onion-balcamic dressing:
take half a small onion and cut it into tiny slices, add white
balsamic vinegar and oil. Mix this together with mustard and add
honey, pepper and salt to it. Then add it to the salad an carefully
mix, after two minutes white and green will melt into a light pink
that looks pretty crazy on the dark green rucola.
