Pink Cucumber Salad

Cucumber, peeled, sliced

Some cooked beetroot, mashed
Beetrootjuice
Lemon juice or white balsamico
Honey
Parsley
A little fresh mint
Walnuts, a few
Salt, pepper, soy to taste
Olive oil
And a few leaves of lettuce, chopped finely with the parsley
