Mix some

• cooked brown lentils and
• sweetcorn

equal parts.

pour over dressing made from

• a shallot
• sambal oelek
• lemon juice
• brown sugar
• soy sauce
• olive oil
• cold press sesame oil
• some chopped peperoni

Then add chopped

• avocado
• mango and
• coriander
