Beetroot Bean Salad with Vegetarian Danish Hot Dog Topping

Oh God, I think we went a bit overboard today. But this firework has potential for at least 3 separate, simpler recipes.

First of all, we are introducing some thrilling new technology: some fresh beans were sliced quite finely and then blanched with a little boiling water.

Beetroots - as we never seem to grow tired of them. Sorry. And a yellow paprika was also sitting in the fridge, what can you do.

Now for the "danish" topping: finely chop some pickled gurken ("agurker") and mix with some hot dog style roasted onion ("ristede løg").

We added some crumbed feta and cress, but if you really want to make this hot dog, then you should go for some seitan sausages instead. I would have.

Dressing was simply, oil, mustard, honey, white balsamico and salt, and likewise, could be dansked even more with some yellow remoulade.
