Ever so simple and quick:
1-2 cucumbers, slices
2 tomatoes, cut into tiny cubes
and for the "pesto"
finely chop some
spring onion
fresh coriander
red chili
some green olives
raw sea salt
Couldn't find our mortar, so we just chopped everything really finely and riced it a little in a glass.
Cover with lemon juice and olive oil and pour over salad.
