Steamed Parsnip, Apple and Cucumber Salad

Another healthy winter salad!

Steam some cubed
  • parsnips
in broth until just tender. Save some of the broth and add to dressing.

Chop up an
  • apple
  • half a cucumber
Dressing:
  • sweet orange jam
  • salt, pepper
  • vegie broth
  • olive oil
  • white balsamic vinegar
  • walnuts 
for topping!

Parsnip and Corn Lettuce Winter Salad with Apricots

For this one, wash and dry the
  • cornlettuce
peel the
  • parsnip
and cut it into flakes using a peeler.

For the dressing use
  • some vegie broth
  • white balsamic vinegar
  • olive oil
  • apricot jam
  • salt, pepper
  • a finely chopped small shallot
Chop some
  • dried apricots
and throw them into the dressing. Best have them soak for a while.

Mix just before serving.

Parsnip and Carrot Winter Salad

Parsnip - cut into flakes with peeler
Carrots - flakes of thin slices
Apple - thin slices
Walnuts.

Dressing:
Shallot
Lemon juice and lots of good olive oil
Honey
a little soy sauce


Making of:
3 great colleagues
1 photographer
1 colleague for the washing-up

Roasted Winter Veggies with Parsley Cream

Cut up some sweet potatoes and parsnip. Roast in a grill or frying pan.

Chop some fresh parsley, add a few drop of lemon juice and salt, sour cream.

Cover the warm veggies with cream.

Mmmmh ...

Colourful Salad

Finally the winter is coming to an end and the spring is just around the corner.
In the spirit of various traditions which celebrate that we decided to make a salad with lots of colours.

So we had:
- red beetroots
- green cucumber
- yellow paprika
- orange carrots
- white parsnip
- and the blue bowl, of course :)

For the dressing we used: olive oil, lemon juice, honey, salt and pepper.

Happy Holi to our Indian friends! Happy Easter to the Westerners! And happy beginning of the spring to all!

Curled Root Veggies on a Strange Monday

Winter keeps sitting out there with strong perseverance so what can we do, really, but go back to our rootsy winter friends.

flaked raw beetroot
parsnip
zucchini
parsley
lemon
olive oil
shallot
salt
pepper


Hate me for the chili jam and use something else instead. Some red marmalade and sambal oelek maybe.

It was good, too, it really was. Please excuse the depressed winter language.
It is even better with the feta-walnut topping from Vegetarian Blutwurst Salad

P.S. What I find REALLY unfair is that hayfever season has started despite the fact that spring has not.
