Red Salad with Beets and Pickles

Beetroot (raw, thinly sliced, works best with a veggie peeler), apple (sliced), green olives, a small glass of Senfgurken (mustard pickles, says LEO) and some of their water.
Dressing: olive oil, honey, chopped onion, lemon juice, salt, a little bit of vegetable broth if fluid is not enough to dissolve the: grated horseradish (from a glass or tube)
