Chick Pea Salad with Dried Figs

oh, what a day. some brain food needed:

mix some cooked chick peas, carrots cut in little cubes, fresh parsley and rocket (cut). throw in some pistacios to show off.

for the dressing, chop an onion or shallot, add some lemon juice, olive oil and honey, a bit of fresh ginger, garlic if you dare and like, salt, pepper. then cut some dried figs in very thin slices and have them marinade in the dressing for a bit.

some added feta is nice, too.
