For this, we used two different kinds of fresh and some sundried tomatoes.
The oil for the dressing had been pre-used to marinade some feta, you could also use some of the sundried tomatoes marinade if they were sitting in oil - though that tends to be sunflower, and I highly recommend a good olive oil to the full flavour out of these tomatoes.
And onion, chopped. Some fresh rosemary, salt and coarse black pepper.
